Rainbow Casserole

A lot of you on mylot will know that i enjoy cooking for the family and like to find different things to cooks and many of you have found me lovley recipe sites etc and I have been able to use fod items up in my house etc. So I thought I would tell you all about my Rainbow casserole that we had for tea tonight. My husband chose sauasage casserole for his choice of tea this week (most of you will know that I try and let everyone in the house chose a main meal and an afters every week, that way everyone gets something that they really like, if someone doesn't like the main choice I try and apted it so they have the same meat etc). I'm not into eating meat at the moment and all the sauasges don't normally fit in the casserole dish as I like ot cook extra sausages to freeze or put in sandwiches. So I cook the sauasges on there own and cook the vegatables in the casserole dish, so really I'm cooking a veggie casserole. It looked like a rainbow tonight as I put lots of colourful veggies in it. The children all like different veggies, so one child will leave the carrots, another child will pick the celery out, another child will pick the onion out etc. Hubsband and I are very good and eat all the veggies. So I find the only way to ensure that everyone gets veggies that they like I just throw loads into the casserole dish, and tonight it looked like a rainbow, I'm sure i'll miss a veggie out but tonight there was , onions, carrots, sweetcorn, peas, tin tomatoes, tin kidney beans, celery, etc and veggie stock cubes. So I think next time the Rainbow casserole will have different veggies in it, depends what is left in the fridge. It was yummy, and I tried very hard not ot put the veggies on the plates that the children didn't like and on the plus side the children did get there five a day portions and husband and I got so many more, which can't be a bad thing. I didn't sleep at all last night so I was looking online for salmon cake recipes. Found one I really liked and learned about a herb I hadn't known much about. Rainbow casserole sounds pretty cute. I think your ideas of incorporating all the vegs that the kids like is a great way to insure that they eat them.

Have you made the fish cakes yet?If so were they tasty? Hope so. Thank you for sayig my casserole was cute, it is a good way to be able ot give the children the veggies they like and it ebnsures there is somethnig for everyone there, and you never know they just may eat one of these veggies they say they don't like and discover that they may just like that veggie now!! Method in my maddness!!!LOL

Not yet. I think they will be good though. So you might slide in a extra veg on them huh? I need more vegs.Hopefully next month will be different.

I love your casserole! I make something like that very often in winter time with meat or without! and is always a winner!

When you make Rainbow casserole, what sort of veggies do you use in yuors? Its a great winter warming dish and you can dip bread into it as well

I just use whatever is at hand really and some times I might even used something from the pantry like beans,or lentils! and to dip on it? some garlic bread...yum now I can't wait for winter! its still quite hot here and the humidity is quite high so is like you are melting all the time! even water feels too wet!

I suspect my children, 2 out of 3 anyway, would just complain about it... Sounds pretty good to me though.

Thanks was very tasty and good. Children did moan about the veggies they weren't keen on but I just said pick them out and eat the ones you like, thats the object of putting it all in one pot... and thats what they did

Oh I love your recipe the rainbow casserole would surely do it. I love veggies not only that i have hypertension but also it's the start of the lenten season. So I always focus on fish and veggies. My daughte has an iron diffeciency so she eats veggies a well. Thanks for posting.

Oh.. Sounds like a perfect choice to satisfy the whole family. That is a great way for everyone to get their portions of vegetables for the day. I have never thought to put something together like you did that. I'm sure they enjoyed seeing all the pretty colors together also. Did they notice the rainbow colors? I'm sure they did. Everyone likes a pretty plate of food. Makes my mouth water. Sounds yummy to me too.

Well next time I make a rainbow casserole I'll let you know and you can pop on over and share some with us, not many fresh veggies or fruit left in the house, am gonig ot the supermarket tomorrow night to do the weekly shop. The children did enjoy it, plus the sauasges that went with it

Discussions about salads always upper my appetite. I suggest you better add some nuts in the salad , nuts of any kind are usually tasty. I like chopping the salad small and add some olive oil and some natural lemmon juice. I also recommend to take away the meat. Eating meat is said to block some of the nutrients , because of the proteins and fats...I better read more on that one but it's good that you started making some steps toward your diet. Keep up eating vegetables , anne. Vegetables of all the colors complet the set of nutrients recommended , so your casserole is very good.

Salads are very good as well, wouldn't like to put them into a casserole though!!LOL Yes my casserole was very good and tasty and when I have been to the supermarket tomorrow I shall have fresh veggies ot make another one

It sounds like a good plan to me. Cook enough of everything that everyone can have some of what they like. Very nutritious as well.

And they just try a veggie they don't like either by acciendent or my choice!!!! Kill two birds with one stone. Us mothers have ot be sneaky sometimes

I think casserole is a great way to hide veggies in plain site. Bravo for you. Rarely have I met a casserole I didn't like.

Casseroles are good because you can use any left over veggies, put any meat into them and either have rice/pasta/potatoes/bread or dumplings with the casserole. A lovley meal cooked in one pot

Sounds wonderful. I'm very into rainbows, as you can tell by my avatar.Eggplant would be a purple if anyone likes those. Not sure what veggie would work for blue. A flower might work. Like Chicory if the flowers can be eaten. So how did it taste?

I also don't know any blue veggies but there are so many colourful veggies thats why I decided to call it rainbow casserole, children thought it was a very good name Tasted lovley and there was some left over for me to eat the next day as I'm not eating meat or fish at the mo

Your kids sound like mine one likes this veggie, one dislikes most of them, such a headache sometimes trying to please everyone. Even worse is when something you knew they all liked that one decided they won't eat it anymore and the other two follow but the adults like it. UG!

well that kind of sounds like what my kids used to call my refrigerator stew. id take all small portions of left overs id frozen and some left overs in the frig, etc. and make a big pot of soup /stew. the kids liked it even if they got a little of this and that that they didnt care for when it was alone.

Hi Anne, I love reading about your rainbow casserole! I was picturing the colours as you were describing them. It is often difficult to accomodate to everyone's dietary preferences, especially when there are kids around. It is good to have non-fussy eater around who will just finish everything up. I think you are doing a great job! Do share with us any new recipes that you create.

I did have a baked potato tonight for tea with salad and a little bit of grated cheese, last night I had baked potato with just veggies. I love my baked potatoes

I know you like your baked potatoes that's what made me write the response I did. Get back to the rainbow casserole and treat yourself like the children and get the variation of food. We tend to have chicken a lot and roast it for Sunday, use the carcase for stock for a stew or make a casserole with just mushrooms and onions.

That sounds like a really good way of using up vegetables that need to be used up quickly. I'm really lucky as my children seem to eat most of what is put on their plates.

Yes it is a very good way to use veggies. Once cooked you could always blend it and make a lovley soup

I like cassoroles very much and they are one of the best ways to get rid of some of the odds and ends in the fridge. In my house I don`t throw anything away, so casseroles and stews are part of my life. I also love vegetable soups which have different tastes depending on what I have. They can be chunky or creamy. I often turn the leftovers form a stew into a soup too. There`s not much left to throw away here. I specially love to mic colours as you have done. I think that beautiful dishes are more appetising.
