Fresh garden vegetables for lunch

Well it is that time of the year when the vegetables from the garden are starting to get ripe. The kids brought in a good amount of cherry tomatoes, peppers and funky cucumbers. I decided to have the cherry tomatoes and cucumbers in a salad for lunch. I cut the cherry tomatoes in half and the cucumbers about the same size.I added some Miracle Whip (don't like real mayonaise)as a dressing with some salt and pepper. Also have on the side about 4 of those crackers that restaurants serve with their salads. I couldn't have had a better lunch but next time I think I will add some tuna.

I might've put a little Italian salad dressing on - I don't much care for mayo either and can't eat Miracle Whip - it has corn in it.

The real Mayo tastes rancid to me. I usually buy an off brand and hadn't bothered to see about the corn syrup. I better start reading labels better.

The Miracle Whip has high fructose corn syrup in it. I just checked. No corn starch though.

Your post got me really excited about getting fresh vegetables from your own garden. I planted cherry tomatoes, three weeks ago. Although I think I will have to wait a little longer so I could get to try them. I haven't tried planting cucumbers, I only have herbs like basil, oregano, rosemary and parsley. I'm going to check the local supermarket if they have cucumber seeds so I can get to try planting them. Thanks for the idea.

The cherry tomatoes are so good and just the right size for salads. Try just on cucumber plant next year. Here in Mi of the good ole US of A we can get them already started. that gives them a jump on the season as we have a sort of short growing season. I like growing herbs too had some last year and they were still growing most of this winter.

Love the fresh veggies. We have been enjoying an abundance of veggies from the CSA. I think I may need to go to the farmers' market again soon, though, to add in some other things that "our" farm doesn't grow. Maybe, salmon the next time? Salmon salad is yummy, and it isn't done as frequently as tuna. Or, you could do the same set-up and use it as a bed for a salmon burger. Hmm... All this talk of food is turning my thoughts to lunch. Boyfriend needs to return soon, and we can have lunch...

Hello wilson. I really am not too fond of fresh salmon or tuna .I prefer canned salmon but that wouldn't go too good in this salad for me. My daughter gets wild Alaskan salmon once in a while but i don't care for it. Maybe it's the way it is fixed.

Wow, that is freally FRESH - fresh from your own garden. Recently my husband plant some vegetables in our garden, he water them everyday. Still very small, I just wonder how much longer should I wait. However, I and my mum planted some mulberry, they are great. We ate the mulberry when they turn dark red, sweet. The leaves can be boiled and add some honey or rock sugar. They are great for eye sight and skin/complexion. I like the way you make your salads.

Some years ago we owned a property that had mulberry trees on it. The kids live them. We would take a bowl out and pick the ones we could reach then put sugar and milk on them to eat .They were so good. I had almost forgotten we also had a cherry tree and picked a good number of cherries. Be patient with your garden. It will be worth it when it is ready.

You know that sounds so good. What I really like is the cherry tomatoes, cucumbers, grilled chicken chunks with come walnuts, dried cherries and a little cheese. Gosh that sounds good. So healthy too. Thanks for the suggestion.

Great tips about how to make salad with tuna! Well, it sounds already good enough to be a great salad item for your lunch. You might consider cutting all the stuff into smaller pieces, get some chopped onions on the top of it for a while and then gently shake them. If you like to add tuna then you might fry the tuna lightly with some pepper and onions and then put the salads on it and gently stir the whole ingredients Trust me it will be just so yummy!

Summer is great because all the vegetables are ripe and tasty now, I have had a tomato cucumber salad often the past few days because the tomatoes are just so tasty right now. The store bought tomatoes, maybe with the exception of the organic vegetables, although quite beautiful, are never as sweet because they are always picked green so they travel better, whereas the ones I get from the garden are very ripe and sweet. Hope you enjoy a few more great salads before the season is out.

Those store bought tomatoes have no taste at all. Nest year I want to get some heirloom tomatoes to grow. I bet they would taste even better. I see some more tomatoes out there so have to figure out how to get out there to pick them.

I'm pretty excited as well, I'm just now being able to harvest things from my garden and it's making me real happy. Unfortunately my garden is a little underdeveloped because I got so busy this summer with beginning a new relationship, taking two online accelerated courses, and working two jobs while also volunteering at the ranch my girlfriend lives at. So far I do have some vegetables that are ready to harvest though and so far I have harvested or can harvest endives, red oakleaf and flame lettuce, kale, mustard greens, arugula, cucumbers, some tomatoes, garden royal and rattlesnake beans. I should be able to harvest tomatoes soon and have some that I could probably pick right now. I should also have some peppers soon as well. I'm hoping that all of my veggies will develop in time so I can get at least a little bit of all that I planted. In fact I just enjoyed a salad that had some freshly harvested greens and beans in it today.

Hello jam. Where is Gaylord from Muskegan Mi. My youngest son is named Gaylord. interesting. Any way to the subject at hand. It sounds like you had a good garden going. But they do take some time. The vegetables you have sound like a good salad. I live with my daughter and they raise the garden but they too don't spend the time needed in he garden. I fell in Jan and fractured my tail bone so can' help. They are talking about cutting back or not having any garden next year. But it is so nice to have salad vegetables right at hand. Maybe I'll talk them onto a container garden.

I eather eat a big bowl of salad or a vegetable soup if it´s too cold (it´s Winter here now). My main intredients are usually the veggies I groew in my garden (lettuce, arugule, kale, leeks) but I also add peppers (now as a dressing I made from the peppers I had in the Summer). I often make croutons with stale bread if I have, fried in a bit of olive oil and crushed garlic and oregano.

Wish I could have those fresh vegetable salad for lunch too. You just made me hungry. Last night we had salted eggs with tomatoes and onions as our appetiser. It was the best tasting tomatoes i've ever had for months now. I guess it's because I haven't had tomatoes lately.

Hi deebomb, Surprisingly, We too had vegetable salad yesterday in my home after a long time. Yeah its a better lunch, it gives us a break to our ordinary type of lunch.

Wow. you have a garden of crops? In our garden, we only have flowers. i think i will suggest adding vegetables in our garden to my mother. It is great that you can just eat stuff from your own backyard. Eat healthy and happy mylotting.

wow so nice lunch and that from your garden, makes it more wonderful. I had some tomatoes and all but at the moment it is raining and I don't have much in the garden except a bell pepper, some chilies and one watermelon. Adding Tuna is a good idea. I used to eat tuna everyday when I was at home. It is like US $0.50 in Fiji. Now here in Goa it is very expensive, But still I get it sometimes and make tune salad. It tastes amazing. thanks for sharing and have a wonderful day.

Hello riyauro. I did the cherry tomato and cucumber again today. I did add a small can of tune. I live with my daughter and she buys a off brand of tuna and it tastes very fish. It was ok bu not as good as I would have likes. Guess I'll have to buy a better brand of canned tuna.

must be very delicious a fresh vegetables right from our garden.they can be prepare as an ingredient lot of dish i supposed.at your case you prepare a salad.but we can have hamburger too with that fresh vegetables.add a bun,meat,cheese,mayonnaise,ketchup or anything you like there you go a delicious hamburger for lunch :)

Yes coelen I could have made a hamburger but that's not what I wanted. We have the hamburger patty, cheese, and the bun But I wanted just the tomatoes and cucumbers.

Sounds good to me. I love fresh veggies like that.I like to cut them up & put vinegar, sugar, salt & pepper on them. If i have them i put green peppers & a little pod of hot pepper to.Good stuff.

That really reminds me of my home.My mom told me that food in our garden also gets ripe and everything seems great,i feel so good eating things from our home, so we began to prepare lots of great meal together and had wonderful time.It's so fresh and i have happy mood.

Oh yes adding up tuna or chicken will make it tastier and yummier. I like eating veggie salads too every time I had a chance especially the fresh one which is really so delicious and tasty.But I think having it for lunch will be not enough for me due to fast metabolism that I have cause I am too hyperactive.

I think all vegetables are good for health.I eat a lit of them all the time. I like vegetables salads.I prefar to fresh salads made of cucumber,tomatoes,lettuce,carrots and row spinach leaves.
