The stuffed peppers were a big hit!

The kindergartner and I spent all afternoon Tuesday dealing with all of the bell peppers I bought on Sunday. It was a lot of fun, and we ended up stuffing about 30 bell peppers with our mixture of ground beef, ricotta, rice, tomatoes, and herbs.
I meant to freeze most of them for quick and easy meals over the next few weeks, but that didn't happen. I got half a dozen bagged, vacuum sealed, and in the freezer. There are five left in the fridge, and the rest... well, they were delicious!
I ended up having more tomatoes than I could use in the filling, so we stuffed four of them, too. The kindergartner loves tomatoes, and she was completely over the moon when she realized what I was doing. I made way too much filling, so we bought a few more pounds of on the vine tomatoes to stuff this afternoon. I would have gotten a cabbage to stuff, too, but I completely forgot about it when we were at Sprouts. I have a lot of plastic bags to recycle, so maybe I'll take those to the grocery store and get one then.
Now if only I could find the family recipe for golumpki, we'd be all set!

I love Sprouts! They're relatively new in my area, and a lot farther than I usually drive, but the deals are sooooo worth it!
I was appalled that I spent $20 on my little basket of stuff this morning... but we splurged and bought a few pounds of salt water taffy, so that's where the overage came from.

@much2say I think it's chain-wide, since they do it here too. I usually head out there after dropping the toddler off at school on Wednesdays. Yesterday was kind of screwy since I had an appointment to go to in the morning, and that messed up the whole routine.
I can usually get a big basket full of produce for under $10. That's pretty much all I buy there, since I can get better deals on meat and other items at stores that are closer to us. Nobody can beat the quality of Sprouts' produce, though.

@yukimori Hee hee - I go after dropping the kids off at school too! I enjoy getting my coffee sample there - and another - and then another - ha ha. I like the Sprouts produce too - I do like their meats and seafood too (I know I can get them at lower prices elsewhere, but some stores scare me). I look at all the discontinued deals too!!

So you have been stuffing all day and that includes stuffing yourself too with all those stuffed yummies. . Good idea. I too have some stuffing to do - my first ever home grown tomatoes. They are just around 10 and I shall stuff them with scrambled eggs.

It looks like I am the only one here to have never had stuffed peppers. I have to fill this gape
. Stuffed cabbage is a traditional dish in my area, but it is a bit too long to prepare and cook for me, even with a pressure cooker. I generally stuff only tomatoes and eggplants, but I will try peppers.

I love stuffed peppers. Never tried putting ricotta inside though, I should try that next time. Stuffed cabbage is nice too, there are plenty of recipes online you can refer to.

I love stuffed peppers! In my opinion, the best (and only) peppers for stuffing are the green ones. They have a quite different, sweeter flavour when they ripen to yellow or red. Unfortunately, most people seem to prefer the red and yellow ones and the green ones can only be found in the bigger stores though we can buy 'traffic light' packs with one of each colour. I always choose my peppers very carefully for stuffing. They must be four-lobed and even (people often stare at me as I pick through them, standing the likely candidates on a flat surface to see that they won't fall sideways).
Polish names for things are very often delightful. I love 'golumpki' and must add it to my vocabulary of 'good names to eat'! (I did have to look it up and now know that it's stuffed cabbage. We occasionally see small white cabbages which will be ideal for stuffing whole ... but I've just realised that golumpki are stuffed cabbage leaves, so I shall need a big cabbage with big leaves!).

Is this anything like your mom's recipe? I think that I'd add quite a bit of bacon into the mix because I think that bacon (or pork) and cabbage go so well together.
The cool fall weather and end of Daylight Savings Time means my family gets a hankering for some goo...

@owlwings It's odd how these things vary by region. Most stores here stock mostly green bell peppers, with smaller bins for red and yellow. Stores that have the orange ones usually only have maybe a dozen on hand at a given time unless they're on sale.
I'm so glad to know that I'm not the only one who chooses bell peppers based on the way they stand up! I usually prefer to stick with the green ones because they're short and squat--much better for stuffing than the taller red and yellow ones! Plus the green peppers tend to be a lot less expensive than the other colors.
It seems like that golumpki recipe is fairly similar to our family's recipe, but I seem to remember that the sauce was just a plain tomato sauce. I don't remember offhand if bread crumbs were an ingredient... but if I could, I probably wouldn't actually need to get the recipe from my mom!

Sounds like they were very good. I have not had stuffed peppers in a while. Hubby does not like them.

Friday was my day for shopping. There is a great and old market across the city, but it is interesting and they havbe goog prices in just about everything. I go with Leticia in my friendly taxi with 2 big carts where to place the produce I buy.
O filled my freezer but still I had yummy things as left overs.
I love stuffed bell peppers.

That stuffed bell pepper of yours seemed delicious . Us, we have our stuffed spicy jalapeƱo with ground pork , cheese and tomatoes and chopped Thai Chili . Delicious too.

i'm nearly more fond'f those stuffed maters'n i am the peppers! 'course, can't eat either these days...so reckon i'll jest drool 't the thought 'f yers. there's a sprouts in lubbock 'n when i'd the need to go there e'ery 6 weeks fer treatments, we always brought a cooler. they jest'd so many thingies to choose from 'n better pricin' 'n in these parts. i dunno what a golumpki is??

It's a Polish dish--stuffed cabbage.
I'm going to stick some of the extra filling in the cabbage I just bought, but it's nothing like the golumpki my grandma used to make.
I've been trying to get my mom to give up the recipe for several months... seems I'm probably going to have to go swipe it from her cookbook the next time I go there.

@yukimori thanks! don't reckon i've any kin who cooks such 'n'd ne'er heard 'f it. one'd think she'd be most thrilled to keep passin' family recipes down?? yepperz, i'd be copyin' that sucker next time she t'weren't lookin'!
