Shepherd's Pie (or Cottage Pie) - what's in yours?

Shepherd's Pie traditionally is made with lamb, while Cottage Pie is made with beef. The name Shepherd's pie eventually stuck to the beef version in the US probably because beef was more prevalent here. My mother used to make it using her leftovers from a roast beef dinner, but what she did was grind the beef and vegetables together and mix it with the gravy. Then she'd put it in a large pie pan and top it with mashed potatoes. I've only ever seen one mention of this method of making it and that person was from England. My grandfather's grandfather came over from England, so did this method come with him? Now I make mine (which my mother assured me was NOT Shepherd's Pie) with ground beef and mixed veggies and gravy. The potatoes are mixed with garlic powder, sour cream, butter and other seasonings. My daughter adds cheese, but I don't. That last is one of my questions - I've been seeing recipes all over that call for cheese in the potatoes or on top of the potatoes. I never had that at all growing up and don't use it when I make mine. It seems so out of place. So, how do you all make yours (whether beef or lamb)? Do you use pre-cooked beef that you grind or do you use ground/minced beef or lamb and a mix of veggies? What do you do?

I neither use beef nor lamb but chicken with all the other ingredients.

I've never heard of it made with chicken. That's interesting. Is your chicken minced or is it whole cooked pieces?

@allknowing I might have to try that sometime. I like chicken pie. This is the same, but has potatoes instead of pastry crust.

@jerzgirl Yes chicken is minced. Actually we have given up eating red meats.

Ground beef, onions, gravy or mushroom soup and lots of veggies. No cheese in the potatoes. Cheese and tater tots on top turn it into tater tot casserole.

We love tater tots, but I have yet to try that way of making it. Mom always had copious amounts of gravy left from her roast, so that was mixed in with the ground up roast and veggies.

@Raelove I am so sorry I didn't see this sooner. I didn't deliberately ignore it. I love tater tots, but I'm kind of funny about which textures go with what. I'd probably like it that way, but still prefer mashed. The only cheese I'll use is cream cheese and/or sour cream in the potatoes (both acting much like butter).

I was not aware of this to be honest. I always make it with beef as it is cheaper in cost.

I'm not surprised. I didn't know anything about the difference until I was long away from my parents' home. I doubt my mother ever knew. Either one is delicious.

Same here. I've seen some recipes (not for this) that call for raw meat, but I can't imagine it getting cooked properly. Although, meatloaf seems to work out.

I've never made Shepherds Pie but when I have had it, it didn't have cheese on it.

I don't mind the mild cheese mixed in with the potatoes, but I'd rather not have it ON the potatoes.

@jerzgirl I think I would too. It wouldn't be quite as cheesy that way and more mixed in.

Ground beef mince gravy and veggies with potato mash on top mixed with herbs and butter and browned under the grill till golden brown and crispy!

I use ground beef, a variety of vegetables, and mashed potatoes. I also like to put panko on the top so it's nice and crispy.

I'm not a fan of crunchy toppings, but I have seen that suggested by others along with the cheese.

Yours is similar to mine, minus the cheese. My daughter will mix shredded white cheese or cream cheese into the potatoes, but nothing on top but potatoes.
