It's a soup kind of day

I don't know about you, but on a rainy, dreary, chilly day there is nothing like a big pot of soup. A few months ago I made a really good pot of lima bean soup. I know, you really have to like limas to make it! Well, my husband and I both like them so it works for us.
I printed out the recipe and thought I put it in a safe place..it's so safe I can't find it! So I made it up as I went.
It a big pot I put:
. A can of chicken stock
. A half bag of Fordhook lima beans
. About 1/2 cup of diced carrots
. About 2 cups of diced potatoes
. A can of diced tomatoes and 1/2 can of water
I could have added some chicken but I don't have any leftover from yesterday.
I have it simmering now and it smells good. It has lightened my mood even!

sounds as if it could be cheap to make too, although I dont like lima beans, I should make split pea soup again though

Sounds good to me. When the weather becomes chilly again, I will appreciate having a bowl of soup.

We are having summer like weather today. I thought it was going to get cooler so I got a container of home made soup out of the freezer. Not even sure what kind it is. Your soup sounds good, because we like lima beans.

We don't have to worry about snow yet, maybe in a few months....I hope it doesn't but if it does it won't be much.

thats funny ... I was going to do a similar post... on comfort food... cos it'd rained all day here..., and I was going to saythat on days like this, one of my go to comfort foods, would be.., and indeed was..., a baked potato... with all the fixins... lol's
