Smaller portions and I already feel slimmer.

After just a few days of dieting, my efforts seem to start to pay off.
I have been having smaller portions of carbs and have replaced them with more salad and fruit. Fortunatly this is the time of the year when I can buy many different veggies and fruit for a reasonable price as we are in Summer in my country.
I have not eaten pasta or potatoes and today I will cook a stuffed sweet pepper over tomato sauce. I stuff it with a mixture of rice (just a little), ground meat and finelly cut onions (I will not fry them in oil this time, wish me luck).
For snacks, I´m having some just made fruit juice with no sugar.
I want to freeze some of this Summer bounty for Winter and yesterday, when I went to the farmers market, I bought green beans, eggplants, zuchinni among other delicious veggies.
I have frozen green beans and they have no problem. But I´m worrying about eggplants and zuchinni. Should I freeze an already cooked dish made with them?

I will proceed immediatly with the zuchinni. Thanks for the tip.

I think so. Still I will not step up the scale for a couple of weeks.

I've only frozen eggplant already made in dishes so I don't know if it freezes well without being prepared first. Sounds like you're doing very well on your diet and wish you continued success
