We have a dozen eggs that need using up and I thought the best way was to make a homemade angel food cake. This still left the yolks to deal with so we'll be making lemon curd. Might even try some of the lemon curd on top of the cake. To make the cake I plan on getting out my big mixer that I don't get to use that often because of space. I think it will be much easier than standing for a long time holding the hand mixer. Lemon curd I've made before but Leah hasn't so that will be a new experience for her. Got my list ready to take to the store for the things we will need. Number one being an angel food cake pan!

@enlightenedpsych2 I did buy a small box of chocolates for Easter but they were $10 off and only $5 instead of $15 so surely that had to be a good thing didn't it? and I haven't had chocolate for SO long!

At the cooking class last Friday we had little tartlets filled with lemon-lime curd. Her recipe seems easy, so that is something I will probably try to make. It sounds like an awesome cooking day.
