Should Have Followed the Directions

Every summer I can close to 300 pounds of tomatoes. I’m so used to doing it that I probably could do it in my sleep. Last year I decided to try something new. I went with a friend and picked blueberries. I processed them into jam. It was delicious but it was more syrup than jam. It’s strawberry season here in South Carolina. As I love strawberry jam, I decided to try my hand it. After the runny blueberry jam, I knew I needed to use pectin. No problem. I read the directions on the little box and started processing the strawberries into jam. Unfortunately I was rushing when it came to transferring the jam from the pot into the jars. I forgot to skim off the foam. I realized it after filling half the jars. I didn’t think it would make that big of difference. I was wrong. The jam is delicious but some of the jars are more foam than jam. They say three times is the charm. There’s always next year…

I haven't tried making strawberry jam before, but we've made zucchini jam and grape jelly a few times. The zucchini jam is more sugar than anything and just uses flavored jello, I believe, to solidify it. We've had some turn out right and some that has been runny. The grape jelly turned out well the first time we tried it, not perfect put not syrupy either. Unfortunately it was so much work peeling and seeding the grapes that I don't think I'll do it again. They were grapes from my sister-in-law's mom's house and they were tiny grapes (more seed than anything).

The only jams I've ever made is the strawberry and blueberry. Mom (Grandma) liked to make rhubarb and strawberry jam. It was good.

Thanks. I ended up with more jars than anticipated. I'll make some blueberry jam this summer but I make another stab at the strawberries next spring.

I haven't made jam in quite a while. I often think I will make it again and forget to do it. Then freeze the berries and use them in baking instead. LOL

Atleast you got to bottle and store. That is success. That foam will settle down.

I love peaches. I tried canning them once. They didn't turn out very good. I usually end up freezing them.

I haven't made jelly in a long time. but you are right about the foam. I buy it now at farmers markets. I did make some red pepper jelly a year ago and will do that again. I love that jelly.

Its delicous and easy to make. I make mine hot but not too hot...I buy red bell peppers when they are on sale at the store. @BettyB

I love to can my tomatoes too. I don't do near as many as you do! I have made peach jam one time and it turned out ok. It is very different from making canned tomatoes, isn't it!

I canned 300 pounds last year. It kept three families in tomatoes all winter. I'll probably do another 300 this year.

Oh well, foamy, fresh strawberry jam is better than no fresh jam at all, I suppose. I hope it works out next year for you. Is it too late to try again this year? We have people doing that from the from the fruit they purchase in the supermarket when there are good deals. Certainly the time to make jams and jellies isn't completely over yet?

There's still time but I ended up with 9 pints of jam. As my husband will only eat grape jam, I'll be eating all the strawberry jam. I'll wait until next year to try again.

Sounds delicious, I've never tried making jam. My Mom used to make a freezer jam from strawberries and jelly.
