Our dinner at Bullfish wasn't all bull

We went to one of our favorite restaurants in Pigeon Forge for dinner yesterday - Bullfish. We have eaten there quite a few times with out any disappointments. Yesterday was the exception.
Things were going along fine - the salads were fresh with excellent dressings and their fresh baked bread was out of this world. We each ordered the sirloin and it was to be medium-well. That means a little pink in the middle. The cook must have had an off day since the steaks both came out well done and very dry.
By the time our server came to check on us and asked how things were, I told him. I said the steak is well done, not medium-well. He asked several times if I wanted to talk to the manager and I finally said, yes. Of course he filled the manager in on what happened. So by the time he got to us he was ready to make amends.
He said something about taking care of it, but I wasn't really sure if he meant he was going to fire the cook or give him a thermometer! When our server approached shortly there after he said, "Your meals are comped but there is tax." So the bill for our over $50 worth of food was a whopping $4.71.
We left the server a very generous tip, after all, it wasn't his fault.

It is easier to see the overdoneness in the photo than it was in the dark restaurant. I told the manager that we go to Pigeon Forge for the food and that Bullfish was always on our list of places to eat....and that's the truth.

@AbbyGreenhill There is a restaurant here that serves the Prime Rib and it's usually perfect. Last year we went at the end of July, I believe the cook was vacationing, the food was not good and the service horrible. Coming back home I sent an email to the manager in the north of Switzerland and I received a voucher for a free dinner for two. I think that they should thank the clients who tell them when there is a problem.

@LadyDuck Exactly! If no one says anything how can they improve/change? I did not expect them to comp the entire bill. I figured maybe a little discount or a coupon or something.

I might grumble and eat it if it was a $5 burger but not a $20 steak.

I tried rare for years, but moved up to since I can't stand the blood all over the plate.
