I Should Have Photographed My Meal

With my son's return home after a week at camp, I wanted to serve a yummy dinner this evening. My family loves all things Italian, so I opted for an Italian themed dinner. I began by grilling chicken breasts on the gas grill. I brushed the breasts with a homemade marinade of olive oil, lemon juice, honey, fresh basil, garlic, salt, and pepper. In addition the chicken, we had gnocchi in a butter cream sauce topped with crisp bacon. Our vegetable was a side of fresh spinach sautéed with olive oil, garlic, salt, and pepper. Last night's dinner was a butterfly pasta in a tomato cream sauce from which we had some leftovers. So the kids all got a little of that as well. (Hubby and I stuck with just the gnocchi) Overall, it was a yummy dinner. I love gnocchi. Do you?

I'm not that keen on gnocchi. I think lasagna is my favourite of the pasta dishes.

I just love the gnocchi for a different sort of italian meal. now that i have discovered this particular gnocchi, i will be adding it into the rotation more often

@Marty1 i love lasagna too. love to mix it up. have you ever had it with a lemon cream sauce?

The meal you prepared sounds delicious. I'm sure your son was happy for such an awesome home cooked meal after a week of camp food.

@DWDavis It was a week-long Catholic camp. Loads of fun activities with some faith added into the mix. He had a great time & wants to go back next year as a helper which is huge. Before camp, he said he had no interest in doing that (there's no pay the first yer you do it). After: he would love to. So it definitely had a positive effect

Yes, though he's so exhausted, that he would probably have appreciated it more tomorrow... ah well... I know he loved it. (and i did too)

@jillybean1222 I have seen it made on the food channels. Maybe it is best that I don't try it. If it is too good, I'll want to eat it all the time.

@ElusiveButterfly it's pretty rich... well, i guess it depends on what sort of sauce you use. but it's yummy

Yes, I like gnocchi, it's a northern Italian specialty and I prepare them almost every week. With a rich tomato sauce, no meat.

I first discovered gnocchi when i was waitressing at an authentic italian restaurant with an owner who LOVED food! i learned a lot from him

so i bought this "dried" gnocchi at TJ's in the pasta aisle... I had hesitated to try it, thinking it wouldn't be that good. I was pleasantly surprised! they also have a frozen version that already has sauce with it

It sounds like a good supper, I don't think that I've ever tried gnocchi, I'm not a huge Italian meal lover.
