Planned Catering

Happy Monday! I have been asked to do the catering for the up and coming Lawn Bowls Champ of Champs being held at our club this weekend. Quite an honor this is, so I had better plan the meals well. On Friday I have decided to serve Beef Lasagne with a green salad but what would you say for an accompanying veggie? Saturday my plan is to serve oriental sweet chicken breasts with rice, baked broccoli with cheese sauce and carrot salad. Sunday will be savory mince balls, mashed potato, ratatouille and beetroot. Catering for Fifty to eighty people a day needs good planning. Any suggestions would be most welcome.

Are you catering all alone for fifty to eighty people? This is a lot of food to prepare. I can suggest Greek Moussaka, Chili con carne, braised beef with vegetables, shepherd pie. Those are all things you can prepare in advance.

@Inlemay I see, sorry I have no idea. In Italy we serve lasagna (lasagne) as a first course (like any other kind of pasta), it's always served alone.

@LadyDuck my computer keeps fixing it to the Afrikaans with an "a" ending - I had to set it back to English cause hubby used it last night. Sorry for the incorrect spelling

I am doing it alone - with one other cleaning lady in the club kitchen. I find too many hands spoil the broth - I have already decided the menu, i was just looking for something to go with lasagne

Do you need to provide a vegetarian option? It is just about expected now in Australia. Meat-eaters like us find it a pain but as I said, it's pretty much expected. Your menus sound great. Wish I was a bowler in SA!

Normally all the bowlers send through their dietary requirements - so far no vegetarians (I am normally the one they have to worry about - no fish and no pork)

@JudyEv luckily I make choices that dont involve any of the things I dare'nt eat. I am looking for an idea of something light to eat with the Lasagne - a veggie if possible - but what?

Oh wow! That sounds yummy! I can't offer suggestions, my cooking only stretches to Spaghetti Bolognaise, Chicken curry or Cottage Pie! I'm sure you will do it all excellently :)

@responsiveme we have three bowlers that may not eat spicy or hot food, so curry or Indian meals are out this time, I have made it before

How'bout an 'hors-d'oeuvre' plate of fresh radishes, baby carrots, sliced cucombers, etc. You're right, casserole dishes are the best way to cater this big a crowd, they go farther and with less time and labor involved. Good luck.
