Salted Lox

My hubby really enjoys getting some fresh salmon when it is on sale. He then takes the salmon and pulls out all of the bones. Afterwards he puts the lox which has been divided in half and each half into two pieces skin side down in a loaf form glass dish. He sprinkles salt with pepper or lemon pepper over each piece and puts the pieces together one on top of the other. The pieces then get weighed down and after a number of hours the lox is ready to eat. Slice thin and put on crackers, toast or bread. It is really good. Tonight my hubby was having some on toast and placed the toast on a dish. Our cat Sid quickly took a sniff and started to eat some of the lox. I just couldn’t believe it because it is salty but tasty. Anyway you should have seen him drinking water afterwards. Usually when he discovers something he thinks he likes but it doesn’t really agree with him he never eats it again. I wonder if he’ll ever try this kind of lox again. I almost forgot to mention that you can make it as salty as you like because it is the salt that “cooks” the lox and it is also great once you put it on a cracker or toast if you sprinkle on some lemon juice.

I like to prepare gravlax at home. I clean the salmon, and remove the bones, just like your husband does, then a cover the two half with a mix of salt and sugar, pepper and a lot of chopped fresh dill. I assemble the two half, put a weight on it and let rest in the refrigerator two days before slicing and serving with blinis or toasted bread.

@RasmaSandra It's excellent because the salt keeps it fresh and the sugar slightly cooks the surface. I also prepare the honey mustard and dill sauce to serve with it.

We never made our own lox. I don't care for it, but we buy lots of smoked lox to eat on bagels with cream cheese when my kids stay overnight. My grandkids eat it like candy. Poor, beautiful Sid. Let me know if he tries to sneak it anymore.

I know that lox are very salty so I'm kind of surprised your cat liked it however I assume the fish smell was enticing

That was what probably drew him to it the fish smell @Marilynda at least he got to find out it was salty.
