Lemon curd bonanza!

Last week I really fancied some lemon curd, so I bought a bag of lemons and made a batch, which produced two and a half jars. The half a jar soon disappeared, but I thought I would take one of the others as a gift when I called on a friend. She was pleased and said ‘Oh how funny, I really fancied some lemon curd a couple of days ago so I bought some, but it isn’t as good as the home-made stuff’. Then a couple of days later another friend called on me – and guess what she brought with her? Yes a still-warm jar of home-made lemon curd! It’s really funny as it isn’t something that any one of us makes or eats all that often! Must be the weather, the season or something! All rights reserved. © Text and image copyright Fleur 2016.

That sounds heavenly! I did not know what it was until I looked it up just now. My little granddaughter and I both love lemon things and that sounds like it would taste so good on toast! I hope you enjoy it. I may whip up a batch, I'll have to look up a recipe for it.

It is perfect on toast, also makes a nice filling for a sponge cake and is really nice with plain yogurt too. I will find my recipe tomorrow.

I have always loved lemon curd. I know you can make it at home but I would not know how! I ought to look up a recipe. I also like lime curd that is very tasty but you don't often see jars of it.

@Fleura Ooh I would love that please. I have never known how to make it. My grandmother used to make jam tarts for us on a Sunday but used to make Lemon curd ones just for me! Spoilt little brat eh! Thank you! XX

@garymarsh6 Here's the recipe: 1 lemon, finely grated rind and juice 3 oz (85g) sugar 2 oz (56g) butter 1 egg, beaten Use a gentle heat; if you have a double boiler pan it is ideal but otherwise just be very very careful to make sure it does not boil! Heat the lemon rind and juice, butter and sugar together until the sugar dissolves. While stirring with a wooden spoon, pour in the beaten egg and stir continuously until it thickens. This doesn't take very long and it doesn't become very thick when warm so don't overdo it, it will thicken properly when cool. Pour into jars and seal. If disaster strikes and you end up with strands of egg in your curd, you can strain them out using something with largish holes like a colander and it will be fine.

It's not that difficult to make but you do have to watch it carefully otherwise if it gets too hot you will end up with lemon-flavour sweetened scrambled eggs! I make lime curd too, yummy! I can copy out the recipe if you like, it came from my great-aunt, she used to bring us a jar when I was little and I would eat if by the spoonful!

I love the lemon curd, I use it to make a breakfast cake, with lemon curd and poppy seeds, it's delicious. We have exactly the same manual lemon juicer.
