I have a lot of things to do for tomorrow´s barbecue.

As many of you have read, tomorrow I will have a lot of people here for a barbecue. Leticia helped me a lot, but tomorrow she does not come and there are things I cannot do today. I´ll have a dry bean sald. The beans are cooked, but I have to add the diced onion, the cilantro and the salt, pepper and lemon. The salad I prefer though is a potato salad I make with just homemade mayo and dill pickles. I will make the mayo tomorrow. As a fresher salad, I will make Tabbouleh Salad. It is not hard to do, but all the veggies have to be cut and diced at the last minute. For appetizers, I´m going mexican with refried beans and guacamole. As usual here, they are made at home. The refried beans are made, but the guacamole has to be made at the last minute. When I think of this, I feel that as all has to be done "at the last minute", I will have to need a helper I don´t have. Fortunatly, Humberto will be in charge of the meat. What salads do you make for a barbecue?

It depends on what I'm serving. Sometimes potato salad and cole slaw, sometimes corn salad and a tortellini salad. I like to mix it up!

I decided against coleslaw because it would be too much work for Leticia. My hands and fingers are shaky so I cannot cut the cabbage the way I like it.

Usually like a potato salad or a pasta salad..however, I have had many good salads for barbecue including carrot and or cucumber salads...your salad's sound good!

As the Tabbouleh has cucumber among other veggies, I guess that will be my fresh salad.

When we cook for a crowd now we try to do as much in advance as we can. Otherwise sometimes you don't get much of a chance to mingle with the guests.

I know and I did. But I don´t like to cook the potatoes the day before. And the Tabbouleh has to be made in the moment. The guacamole has the same problem as avocados change their colour with time. The only thing I might do today is the mayo, but that takes only a moment.

Usually porato salad, pasta salad and a broccoli salad. Sounds like you are going good to have a busy day ahead of you.
