My Vermicelli Spring Rolls

It's 7:20 in the evening and I still don't feel like eating my dinner. I think even my parents don't want to eat yet. Why? Because we had a heavy snack this afternoon. What did I cook? Vermicelli spring rolls. Lumpiang sotanghon, as we call it... This is the first time that I cooked this at home. I got the idea from a Korean food stall who have this dumpling with potato noodles inside. So, my imagination ran wild again while my tummy was rumbling this afternoon. We have vermicelli noodles at home. We also have napa cabage and celery in the fridge and some leftover pork rinds. I was in the mood to experiment and so I did and it was a success. My parents loved what I cooked.

So you cooked first the vermicelli together with those veggies before you finally wrapped it in spring roll then fry it again?

@SIMPLYD Yup, you're welcome. Just make sure you drain the vermicelli very well so that the wrapper won't be torn.

Yup, I just boiled the vermicelli... And then I drained it. While it is still hot, I added the sliced veggies and added some seasonings. I forgot to add pepper, hihihi my mother noticed it. You can reduce the salt because you can dip it in soy sauce with vinegar afterwards. When the mixture is already cold, you can start wrapping. And then fry.

Yup! Try it! It's like eating crispy sotanghon.. hihihi crispy because of the wrapper and not the sotanghon...

They look really very good. It looks delicious and tempting.I have never made vermicelli spring rolls. I will also try this recipe. Kids will definitely love it.
