Happy Labor Day Weekend to my US friends here at Mylot! Since summer's coming to an end and fall is fast upon us, it's time for my end-of-the-month roundup on my fantastic August recipes I've created in my crockpot last month.
1. Crockpot Fudge Brownies Redemption: A-. It came out much better than last time. Nothing wet, but not quite firm for a brownie. It's close enough and good as it gets for me.
2. Crockpot Italian Parmesan Chicken: A+. This was a scrumptious and delicious dish to make and real simple too. This time, I've used regular chicken breasts and not the thin version. I also made a lot of penne pasta to go around for leftovers as well. And even leftovers were yummy too.
3. Crockpot Hashbrowns Casserole: A. Although I've used deli ham for the cooked ham ingredient, I've wondered if it would taste better with leftover ham from ham steak. But it was hearty and filling for a breakfast, brunch or dinner meal. Leftovers were fanatastic as well. Another score for a breakfast casserole meal.
4. Crockpot Swedish Meatloaf: A-. I've swapped ground turkey for ground beef (since my ground chicken I had expired), it turned out real well, since I haven't had meatloaf in a couple of years. I would love to try it with ground chicken someday. I've used gravy instead of ketchup and would have to try it with ketchup when I make it next time. I made it with mashed potatoes, which was a great complimentary side dish. Due to adding it a bit too much salt to the mixture, it became a bit salty but edible. I would just have to make it just right for the next mashed potatoes I make as well.
5. Crockpot Tuscan Bean Soup: A. Due to the hint of spiciness from the red pepper flakes, this soup was adelicious and perfect to warm you up on a cool late summer night. I'm not a big fan of spices, unless it's mild. But if I could do without it, I think it would turn out better. Leftovers were very good, too.
6. Crockpot Chicken with Savory Squash--A+. For this bonus dish I've had this week, this was another simple and easy meal to make in the crockpot for eight hours on low. You can't go wrong with butternut squash. This would have to be close to be one of my instant faves of my chicken dishes I've made so far. And leftovers on Wednesday were divine as well.
Here's what I'm planning to make this month in the crockpot from the Recipes that Crock website. Perfect to warm me up, since we're heading right into fall weather soon.
1. Crockpot Chocolate Raspberry Lava Cake. As I planned to make after I've redeemed myself this summer by making the perfect chocolate lava cake, this is going to a home run. I've brought fresh raspberries for the topping and raspberry jam to use for my lava at the store this afternoon. I'm going to make it this weekend to kick things up. I did notice there's one more lava cake recipe on the website: chocolate peanut butter lava cake. I might try that one later this fall.
2. Crockpot Chicken Noodle Soup. You can't go wrong with this favorite soup, even if I might not have a cold. I have brought frozen noodles in late spring. Now I can use them up for this soup.
3. Crockpot Ham and Cheddar Quiche . This breakfast meal should be perfect for any time of the day meals. I hope it's the crustless version.
4. Crockpot Chicken and Gravy. This should be another simple and easy dish to make as well.
5. Crockpot Ravioli and Meatball Casserole. Doesn't it sound delicious? This is going to be my pasta meal of the month.
That's what I'm planning to use my crockpot this month. Around October or November, I'll be doing another round of redemption recipes to perfect before the holiday season.

I no longer have a crockpot but if I did, I would be using it too.

It is also Labour Day weekend here in Canada. All those recipes sound so good. You are getting great use out of your crockpot.

What I love about a crockpot is you put your ingredients in let it cook and it's ready to serve. I make a stew with sausage, potatoes and carrots that is fantastic if I don't say so myself,
What I like is how soft and tender everything is when finished. You have a lot of fantastic recipes yourself there Kristen
