Fried breaded eggplant for lunch.

Some days ago, I fried a couple of slices of eggplant for lunch as I did not know if my friends would like it. The loved it so much that when we went to the supermarket, Hugo got 2 big eggplants and placed them in the cart. Today, I cooked riceand added a small piece of leftover meat from the barbecue heated over fried sliced onions and several fried breaded slices of eggplant. YUM!!! Now I´m readyfor a nap Lunch was delicious! Do you like eggplants? How do you cook them?

I bread them and fry them. We don't have them very often.

I peel it and cut it in thick slices. The I dip the slices in a batter made with a beaten salted egg and then cover it with bread crumbs.

This is my favorite way to eat eggplants. I often make them breaded and fried, they are better than meat.

That does sound delicious. Hope you had a good nap. I do like eggplants. I've had them as steamed, and also in eggplant parmesan and my crockpot no-carb veggie lasagna.

@marguicha For the lasagna, yes. And zucchini too! It's a bit tricky to make it into lasagna-shaped noodles. I'll be happy to share the link with you.

@marguicha It is mostly that we are just not used to having them so it's always a big deal to rediscover what to do with them.

We love eggplant, my husband especially likes them! I dredge them in flour and then fry slices in a little oil. They are wonderful!
