What's for dinner? January 22

What's going on the dinner table tonight? I want to know! I am trying a new recipe: Ina Garten's Skillet-Roasted Lemon Chicken from her Cooking for Jeffrey cookbook. To go with it I am going to make basmati rice and roasted cauliflower. I had originally thought of doing roasted potatoes with the chicken since I just had rice last night but they will take too long in the oven and the chicken will already be in the oven so that plan won't work. Oh well. Anyway, that's what's happening here. What are YOU having? Do tell!

I don't love chicken but I try to have it at least once a week so we don't have red meat every night.

I am an Ina fan as well. I don't think I ever tried one of her recipes though. I had some chicken, mashed potatoes and string beans for din din.

My dinner is similar in that we're having roasted cauliflower along with chicken. I like Ina Garten so I'm sure your dinner will be delicious.

That looks good. I had a hot dog on an onion bun, tater tots, crockpot corn casserole with water, iced tea and an Ensure chocolate protein drink.
