National Pancake Day

One thing I do love is pancakes. One thing I can't have on my Whole30 diet is pancakes. Until today.
One ingredient on my diet is almond flour. Before I knew it was national pancake day, I determined to buy some almond flour if Wal-Mart had it. My hopes were almost dashed, when I looked up. Why does everything that is good for you have to be on the top shelf? Thankfully I could reach it.
When I got in the car, I learned it was National Pancake Day, and I determined to find a Whole30 compliant recipe. Not exactly Whole30, but it is Paleo, which is basically the same thing, I found an almond flour recipe. As you can see from the picture above.
I found the recipe on allrecipes. I can tell you, it is my new favorite breakfast treat, and served with blueberries, is delightfully delicious and light.
This also takes care of my sweet tooth I've had for the past several days. If you're into healthy, just go to the allrecipes site and search paleo pancakes or almond flour pancakes. You will find this delightful recipe.

I'm glad I finally found something delicious I could eat that is still Whole30 compliant. Not that everything I eat isn't, but I needed something on the sweet side, and usually there's nothing a person can eat from the sweet side of life. I've now added completely compliant Chocolate Cookies to my eating enjoyment.

I wish I would have known it was national pancake day! I love pancakes, and I would have gone to IHOP and had my fill of flapjacks if I had known. Probably better that I didn't, because I'm sure any restaurant serving pancakes today was probably packed!

I know nothing about National Pancake Day (presumably in the US). Pancake day here has always been Shrove Tuesday (which, of course, varies with Easter as it happens at the start of Lent).
Pancakes were supposed to be a way of using up the foods which one wasn't allowed to eat during the Lenten Fast (actually, things seem to have changed, and, these days, eggs and flour and milk are allowed, but meats - except for fish - are not.) Well, that's what we were always told, anyway, but then we weren't Catholic.
I had a brief look at the Whole 30 diet plan and it seems that you can eat gram flour (which is ground chickpea/garbanzo flour). That does make an excellent pancake, and without any egg, even!
I have never tried using almond flour in pancakes and I imagine that it would work best for sweet pancakes (as you have shown) but yours do look rather dark. My mother always served pancakes with lemon juice and a sprinkling of caster sugar but later on I learned to prefer savoury pankakes (especially cheese pancakes), which are made in exactly the same way but served with grated cheese (or other fillings) folded inside. Nowadays I sometimes fill them with a ground meat filling (as for a bolognese sauce) and with a white cheese sauce to cover, then baked in the oven - they are rather like cannelloni, in fact.

@just4him You might find it either as gram flour or besan flour in the Indian section of your grocery store (if it has one) or in an Indian store (Yelp tells me that there are five in Green Bay)

They sound good. I haven't heard of chickpea/garbanzo flour. They're dark because the batter is dark. They're very good.
I have heard of Shrove Tuesday and the pancake race.
Almond flour is healthy, and there isn't sugar in the pancakes. There is a banana and cinnamon, which contributes to its darker color.

I have seen paleo recipes that looked very good like nachos, flourless cake etc. I want to try them all.
