dinner tonight -- porcupine meatballs

Tonight's dinner is a popular one around here -- meatballs made with seasoned ground beef and rice, otherwise known as porcupines due to the spiky rice grains. I like them cooked in tomato soup or tomato sauce, but some of the kids don't, so I just used beef broth for the cooking liquid tonight. I made it even easier on myself by cooking them in the Instant Pot and pulling out some precut veggies and ranch dip as a side dish. What did you make for dinner?

I made Fettuccine Alfredo. I don't have a photo of it, but it was delicious all the same. I'm so glad I no longer have to make two meals at meal time anymore. I used to have to do that when my kids were small.

@Marty1 I admit that it came from a package this time. I have made it from scratch before and yes I did make it from the recipe. The ingredients for it are so expensive.

That reminds me, I need to buy more pickles. I'm picky about them and usually just get the crunchy refrigerator kind, like Claussen or Bubbie's.

No, I mix it into the meat uncooked and it soaks up the liquid as they simmer.

@thislittlepennyearns I'm linking this recipe so you have the slow cooker directions, but the ingredients are MUCH more fussy/complicated than the recipe I use. That one is from a church cookbook, so I'll have to take a picture of that for you.
Delicious and easy porcupine meatballs that take minutes to make and cook in your crockpot. Little prep and impressive results!

You don't need cooked rice to make it. The rice is raw when it's mixed in, and cooks while the meatballs simmer.

@spiderdust it's called pinakbet or pakbet, but we only used squash (kalabasa), eggplant (talong) and bitter gourd (ampalaya) and ground pork.

I LOVE these, and have a recipe for them. I have not made them in ages, but I am so glad you reminded me of them. These are DELICIOUS! Gotta do some digging to find my recipe. Well, when I get home from this work trip.
