Leftovers For Dinner

Yesterday for the 4th of July we had a barbeque. We made chicken kabobs with breasts chunks, red and green peppers, onions, and mushrooms. We also grilled hamburgers and hot dogs.
I also made a Southwest Salad, potato salad, and opened a can of pork and beans. For desert we had pecan praline muffins and blueberry muffins. All in all, it was a nice little picnic.
So, tonight for dinner we will be having leftovers. Yum!
I love when we have leftover barbeque meat and salads. It makes life so easy to just fix a little extra for the next day.
Instead of having our bbq outside the way we usually do we had it in the air conditioned house. It was way too hot outside. Besides, as soon as the meat was done the sky opened up and poured down the rain.
We always have a couple of people or so over for holidays and yesterday was no exception. The rain and heat didn't ruin it for any of us. We had fun.

The day was good! I am feeling really hungry now after reading so many mouthwatering dishes you arranged for the Party and you still having the leftovers! No problem, I will also have some minced muttion with Indian bread after some time in my dinner!

I love having leftovers and those nights that don't require a lot of time in the kitchen. Our 4th was relatively quiet until the thunderstorm rolled in.

That was a splendid menu. We also just eat the leftovers after a festive holiday. We celebrate the 4th of July here as the "Filipino-American Friendship Day."
