Do You Like "Kimchi?"

I read from the net that the Korean food, kimchi, is good for the body. So I got interested in it and bought a pouch from the grocery. It is made in Korea, and made out of fermented Chinese cabbage, spicy ingredients like chili pepper, etc. It tasted good, like an appetizer. It can go along well with fried or steamed fish. I will try to make my own "kimchi" from tutorial on Youtube. Are you familiar with that food?

I make my own kimchi which is only fermented for 3 days. The ones available in the store are considered as aged kimchi which are best for stews. I like my kimchi sweet, spicy and crunchy then eat it with pork belly bbq.

Well, it could be foreign-sounding for us, but we have the local version like the "achara" or fermented papaya strips although theirs is too spicy.

It was my favorite food back in highschool and college. But ever since I had this uric acid thing I stopped eating that dish. But I missed it so badly.

There's so many Chinese cabbage (wombok) in Baguio, so people there can make their own version. Does your Mom like it?

Yes, I love Kimchi! I have heard that it has a lot of health benefits like it promotes digestion, regulates cholesterol, high in antioxidants, treats atopic dermatitis, aids in weight loss, boosts the immune system, prevents cancer, treats diabetes, etc. I have also read that it is proven effective in curing avian influenza. Of course, you have to take it in moderation as excessive consumption of kimchi can lead to gastric problems and hypertension.
