last night's dinner -- Hawaiian haystacks

Everyone likes talking about food, right?
We've eaten haystacks so many times this summer, I'm surprised that people aren't tired of it. Last night I made Hawaiian haystacks instead of the Mexican ones we've been eating so much (note: neither of these dishes are authentically Hawaiian or Mexican) because I needed a little variety.
I set out containers of cooked shredded chicken, tortilla chips, diced red pepper, diced tomatoes, carrot chips, diced green onion, shredded lettuce, rice, mandarin oranges, chopped celery, chow mein noodles, and some chicken gravy that I made from scratch. I meant to set out diced pineapple, but I forgot it. Everyone put what they wanted on their plates and created their haystacks to their own liking. This is my plate.
