tonight's dinner -- top your own pasta

I had a lot of bits of stuff in the fridge. Not enough to make a meal on its own, and I couldn't figure out how to put it together to make a casserole that would get eaten, and I really didn't want to make haystacks again. Since I had been making spaghetti sauce all day (shown in the photo above), it made sense to fix some kind of pasta for dinner. They're just now sitting down to dinner. I have spaghetti and ziti, the red sauce I made, a quick cheater's Alfredo sauce that I put together in the Vitamix, chopped tomato, chopped red bell peppers, sliced black olives, chopped green onion, grated Parmesan cheese, diced cooked chicken and browned ground beef. I also have salad and garlic sourdough bread with butter to go with the pasta. Time to eat!

@spiderdust We are only two and I always cook just enough so that we do not have leftovers. It's easy only being two adults.

@LadyDuck Yes, it was definitely easier to avoid leftovers when there were only two of us.

I had a surprising amount of leftovers, but they'll get used up for tonight's dinner.

It can be as big or as light as you like, depending on what you put on your plate.

I was really upset with myself that I forgot to get bread to make garlic bread tonight. But I survived. Lol

This was a loaf of bread with garlic cloves baked in it that the other half brought home from work. In a pinch, I've used hot dog buns to make garlic bread.
