Oh Boy, Salad Selection

Tonight's dinner- Salad. Not just a green salad but a variety of salads. First thing this morning I made a great big macaroni salad/ I threw chopped tomatoes, black olives, green peppers, onion, some boiled eggs, and leftover chicken breast. before lunch I though, a potato salad would be good with this.
Just before lunch I though, a potato salad would be good with this. So I made a potato salad. thought about a salad mix that I had in the fridge. So I mixed it all up for dinner too. It is a southwest salad with extra cheese that I added to the mix along with chopped cucumbers.
My fridge was suddenly filled with salads. So I called my sister-in-law and told her my dilemma and she is coming for dinner with a seafood salad in hand.
I think we will have enough salads to last us for a couple of days or so.

Funny you should ask..
Salad.
Not the pasta kind, or the potato kind, not even the macaroni kind.
Just a good old salad with lettuce, tomato, feta, cucumbers, and maybe some chicken.

I made spiral macaroni noodles, with spaghetti sauce and mozzarella cheese.Along with this, we'll have Parmesan chicken and California mixed vegetables the (frozen kind.) I have to pick Jay up from work in about 15 minutes.

We had a salad with supper last night. It was very good. Just lettuce and green peppers with dressing in ours. Our food budget was low this week and I had to make things stretch.

@HazySue When I was younger I hated just straight lettuce for a salad, now that I am older and have to pay for the ingredients I can live with it.

@Shellyann36 I know what you mean. It does make me chuckle when I remember the foods I would turn my nose up at as a child. Now I pay premium price to have those same foods.

Well it's 7am in the morning here but last night I had milk fish fried in butter and some corn soup.
Mentioning the potato salad, I am craving for one now and I think I'll make one for lunch or dinner later. I should go grocery shopping.

I love salads. The more the variety, the more taste it brings. I like salads raw as well as slightly cooked.
