These are my cinnamon pickles. I have canned them all. I made the little jar for my sister. The pickles are tangy, and crunchy, and sweet. Hubby put an extra box of redhots in the syrup. I got even, and put an extra cup of vinegar. When you make "lime pickles" it is important to rinse them well and to make sure that your liquid is acid enough to kill botulism. So I put in more vinegar. The jars have been sealed in the water bath canner. All the lids made that wonderful popping sound that says the jars are sealed.

This recipe called for a lot of heat the syrup, drain the slices and set the syrup overnight. I like the result, though. I know it can be done with apples as well. I wonder if the lime step is used, though, and the alum?

Cinnamon pickles or cinnamon rings. They are crisp, but also sweet and vinegary.

Cinnamon red hot candies. I know that I have seen pickled sausage links that are also called red hots, but that is not for me. Not every one likes pickles. How do you feel about sauerkraut?
