stuffed pepper soup for lunch

I actually threw this together a few nights ago, but I pulled it out again for my lunch today. It's even better now, as the flavors have had time to meld. There are official recipes for this, but I didn't follow one. I started making it in an attempt to stretch a pound of ground beef further, but didn't want to make a casserole or any of the things I've been making over and over again lately. I had a bag of frozen mixed pepper strips, plus a bag of frozen "seasoning blend" (I've mentioned this one before... it's diced onion and celery with a little bit of diced red bell pepper and some parsley). Those, plus a can of tomato puree and a package of riced carrots, were my vegetables. I added some browned ground beef and a jar of chicken stock, plus a couple of secret ingredients at the end (like the hefty squirt of ketchup I added when no one was looking). I think I have one serving of this soup left after lunch today. I'll probably never be able to recreate it quite this way again. How's your afternoon going today?

@spiderdust As we do not celebrate Thanksgiving, I do not have to care about decorations until the first week of December, when I will put up Christmas decorations.

@LadyDuck I miss being able to put up a big tree. Unfortunately with the dogs (and now a toddler too), a big tree would be a toppled Tannenbaum long before Christmas, and all of my ornaments would be destroyed. We have a 4 ft tree that we put on top of a corner shelf that is out of the dogs' reach, and we also decorate the rest of the room with garland and lights.

I'm not having a very relaxed weekend, but we're at least getting a lot accomplished. We put away all of the Halloween items and have just the basic fall decor out right now. We'll wait on the turkey decorations until Thanksgiving week.

I'm like you with a lot of stuff I cook. I rarely follow a recipe. And sometimes it's bad because indeed if it turns out well...I may never be able to make it the same way again. But stuffed pepper soup sounds delicious.

There's a lot of stuffed pepper soup recipes out there, so definitely give it a try sometime. Having a batch of soup on hand for lunches seems to be working out well too, so I'm currently thinking about what kind of soup I'm making next.

@porwest I have a LOT of pinto beans leftover from last night's dinner. I suppose it would be prudent for me to make a soup out of that.

@spiderdust Yeah, I try to make a soup a week during the colder months. Don't always accomplish that, but mostly do it.

Normally I wouldn't add ketchup to soup, but it needed a bit of tomato paste or something similar and I didn't have any handy... so ketchup filled in that spot.

This sounds delicious, I'd love to eat a bowl for lunch! You do exactly what I do, add a little catsup or BQ sauce to something I'm cooking, to make it taste better. I can never cook the exact same thing twice! lol

@spiderdust I do my own thing, when it comes to following a recipe! lol One time, I added a tad bit of salsa and the meal was a hit! If someone asked what I added in, I might not remember everything or how much:) When my mother baked homemade bread I asked her, 'Mom, how much flour do you add in?' Her reply, 'Until the dough feels right!' Good grief, I could never compete with Mom's ability to make homemade bread
