Trying to decide what to make for dinner....

I took out some ground beef to make something with, but I am trying to figure out what that should be. I made enchiladas the other day, and a chili recently.... My husband recommended tacos, but we have those quite a bit. That will probably be what we end up having, but I just thought I'd hop on here and see if anyone had any good ideas. I still want it to be low carb of course...which makes it harder to decide what to make. Are you having another good for dinner? Maybe that'll give me ideas :)

If I had ground beef on hand, I'd do meatballs or meatloaf. I learned this past year that you can make it with ricotta cheese instead of bread crumbs and eggs to hold it together (add parsley, salt, garlic, pepper, etc. as usual) but that will make it low-carb and gluten-free. I was going to do broccoli-slaw meatballs tonight but I discovered that I wasn't that hungry so I'm saving them for tomorrow.

@MommyOfEli2013 sometimes you just have to suck it up and do it. I don't always love eating my vegetables but I eat them. That is the difference between child and adult mentality!

@NJChicaa Well that's why I am going to do the smoothies, least I will get some greens in that way....and I will try more after having those for a while. I do understand that, it's just not easy when not liking vegetables for 30 years lol

Meatballs and meatloaf are good ideas. That's good that you could use ricotta cheese (which makes me think of a lasagna without the noodles). I made a meatloaf before and just used ground up pork rinds but not everyone likes those. I think I saw your post on the discussions list about that, definitely worth trying too...if I can learn to like broccoli.

That is awesome to hear, pizza is always delicious!! I ended up making a fathead pizza for myself, it's pretty delicious :) I also made some taco meat that I can just heat up tomorrow though.

@tammys85 No problem, and I am glad! Yes, fathead pizza is the low carb one. The crust is mostly cheese lol, with some almond flour. I didn't get to enjoy the taco meat because my husband ate it all while I was sleeping lol

I'm a taco person. You can make taco salad instead. I don't know what I want to make yet. I may just microwave a Lean Cuisine pizza and a salad.

@MommyOfEli2013 I wound up microwaving a teriyaki chicken and rice bowl. It had carrots, broccoli, rice and chicken. I decided if I was to eat from the freezer I needed some veggies.

Tacos are definitely good, can't deny that! Sometimes I will just have a taco bowl....I don't eat salad personally. What you might have sounds good, the pizza. I might make a low carb pizza instead

That would be a good choice, I've never actually tried it but I am a picky eater so don't like most vegetables.

I couldn't have the spaghetti (well I could if I used the right kind of "noodles") I do have a low carb taco meatloaf recipe that I used before. Thanks for the ideas :) I got to thinking a low carb pizza with beef.

@CarolDM It is okay :) If I liked the "low carb" noodles then I would make a spaghetti or something like that. Pizza does sound good, just have to decide if I want to put in the work to make the fathead dough.

That sounds good, and yes, I do have a low carb recipe for that (taking out the breadcrumbs). I will have to make that next time I take out some ground beef.

We had a pork roast with veggies. What about sloppy joe's on brown rice, or mini meatball soup. Just make the tiny meatballs, add veggies, tomatoe sauce, low sodium beef broth, and let it simmer.

Pork roast sounds good. I might make sloppy Joe tacos sometime...not a fan of rice, plus that's not in my diet. If I liked veggie the soup might be nice.
