What's for dinner? January 27

What's going on the dinner table tonight? I want to know! I'm trying a recipe from the nutrition guide that goes with the weight/fat loss challenge that I'm doing at my gym. It is for a ground beef dish that includes a bag of frozen spinach, a can of diced tomatoes, and the seasonings of your choice. You simmer everything together for 10-15 minutes. I have fresh baby spinach on hand so I am cooking that down and will use that in the dish instead of frozen. I will serve it over leftover whole wheat linguine that I have from the other night. We will also have some steamed green beans on the side. That's what is happening here. What are YOU having? Do tell!

I'm making creamy chicken enchiladas using corn tortillas. No cream of soup this time, I'm making the sauce from scratch.

I just can't get into corn tortillas. I know they are authentic and all but I'm #teamflour all the way.

@spiderdust I've tried using corn tortillas for enchiladas as they are authentic but I just can't get into them. I think the texture gets too strange after it sops up the sauce. Ya know what is funny? I was just thinking. . . even when we go to one of the local (albeit well-known) taquerias in Cozumel, we get flour tortillas. They probably give the Americans flour tortillas for their tacos automatically. Mexicans would NEVER eat tacos with flour tortillas.

@NJChicaa Flour ones are good too! I have both in the house, but they liked them when I made them with corn tortillas last time and the corn ones are cheaper.

I'm adding a dried Italian herb mix so it will be like a veggie-filled Italian meat sauce over the pasta.
