A vegetarian lunch for everybody: a challenge.

Today, my best friend Dixie told me that she had more time today so that I did not have to go to get the prescription at her work. She would bring it here and have lunch with me. She asked what could she bring, but I have gone to her house, even to stay for the weekend, just telling her at the last minute that I told her not to worry. But I worry because she is a vegetarian, we have a worker here and I have been with the plan of eating what we have. And all that means meat. Please friends, help me with inspiration! What can I do that will be fine for Dixie and enough to fill the worker´s tummy? If she had told me before, I would have soaked chickpeas or lentils. I am thinking about a vegetarian risotto. But nothing else comes to my mind.

Good morning.Risotto is great and filling.Nice tomato salad or green salad should also be nice. I know the feeling as we have one couple here a vegetarian.Good luck

I´ll check what veggies we have at home. I like plenty of bunch onions, the green part diced and placed at the end.

Risotto sounds good, it's the most filling thing that comes to my mind. I love mushrooms risotto.

I don´t have mushrooms, but Dixie eats seafood so I will prepare a seafood risotto and some cheese fried empanadas.

@marguicha Seafood risotto is very good, I made grilled cheese yesterday, I knew I should have not, I had tummy ache during all the night.

I also like risotto, or a pasta with lots of veggies. Does your friend eat cheese? if so, that can open a lot of options. Vegetarian enchiladas are easy to make and filling, esp if you add beans and rice

A vegetarian risotto sounds good to me. There is quite a lot you can create with just vegetables. I enjoy making vegetable fried rice as well. Or how about a stuffed baked potato. I'm sure you'll come up with lots of ideas.

It will surely depends upon what is her dislikes. Veggies are not that picky for food since they have limited taste. But since she like fish and sea food. You can better ask her whats her favorite. And you can get it cooked for you too...So that way it will not hurt you or her... Hope you are okay with sea food

Why is that? But my friend Dixie eats a lot of protein in spite of being a vegetarian. She eats fish, seafood and eggs.

Do the worker not bring his own lunch, I'm a bit surprised? Its so nice of you to make lunch for him too. We give tea and biscuits to workers

They usually do. But they usually bring bad lunches. So I offered to give him lunch.
