Either is fine really, but we've always peeled them. If we have a baked potato though, I'll eat the skin too.

@DocAndersen Tony hates the skins on Irish potatoes but eats them on sweet potatoes. My dad was a no!

@andriaperry now that is interesting. My grandmother was a hard no. My mom likes them with the skins on.

Skin on, looks a little weird in mashed potatoes but I don't usually peel them completely, because the nutrition is in the peel, and I am lazy anyway!

I have eaten them both ways, and I don't mind mashed potatoes with the skin left on. But my preference is for the skin off. But then again, I'm not the one peeling the potatoes, so maybe I would think differently if I had to peel the potatoes every time!
