pressure cooker

Lunch today: tripes are cooking in the pressure cooker.

Today I will make tripes. It is a good dish when it is cold out. Still, I will cook them with veggies and topped with small squares of fried potatoes. The tripes are cooking in the pressure cooker and there are some veggies cooking in a small pot. I have peas and corn and I will later add some sweet pepper and fried onions with garlic. I always like to have some white rice at the side as it is a juicy dish. What are you having today?

I like tripes, they are popular in Italy, the best are those prepared in the area of Parma, better than those they make in Florence.
