What Did I Do with the Chinese Food Leftovers?

Remember the large take out order of Chinese food my hubby brought home Thursday night? We ended up with a full quart or more of roast pork fried rice. Everyone was tired of fried rice because we had another order of it with the beef peppered steak order. I decided to warm it up in a skillet and then crack an egg and stir it into the rice. The egg cooked immediately and it made for a nice dish. My hubby enjoyed it. My mom said it was okay and that she would eat it, but it was not her favorite. I ended up fixing mom a bowl of soup to eat. I still have enough fried rice to do this one more time and I think it may be a nice late breakfast for hubby to bring to work tomorrow and warm up in the microwave. I'm not sure how well it will nuke though. Do you have any ideas of what else I could do with the leftover fried rice? Photo: Pixaby, public domain

We have eaten it like that already for several meals. The man came home with $30 of Chinese food the other night. There was a lot of food leftover. And yes, I was ready to murder him. lol

@freak369 We did that the next day. There was a lot more left, a whole container. Did you use to be on epinions.com?

It's long gone now. I cooked an egg in it one day and then the next made homemade chili and poured over the fried rice. Both were good.

Throw it into any kind of casserole you might use rice in. I have done this many times and it always turns out delicious.

That's a good idea for winter cooking. I seldom use my oven in the summer.

@porwest A nice steak right off the grill would hit the spot right now with a nice and fluffy baked potato.

@kareng Me either. But from time to time. Most of the time I have my grill fired up during the summer.

In fact it is totally alright for you to prepare for the leftovers like that. I would do the same. Usually I will fry the leftover rice at first, then I will add the stirred egg. Sometimes I will add the soy sauce. After that, adding a little green onion will be perfect.

That is exactly what I did with the first remake on the fried rice, added the egg in there but no soy sauce. It already had enough salt in it.

we generally not eat it in the morning if left fried rice in yesterday dinner and thus we give it to someone else who need food and we have here some home who has no food to eat and we give them. we use onion, garlic in friend rice and it may make food taste change on next day and that is why we give that food to those who need as it atleast worth for someone else and feeding someone is the best to work of god too.

In a skillet heat up a dash of olive oil and add veggies like mushrooms, onion, bell pepper and garlic cloves. In another skillet cook a thin steak cut into strips in a little water and a few dashes of worchestershire sauce, when the meat is done, keep the liquid, dump the fried rice in first and stir, add the veggies and top with Swiss cheese. Yes I could be on chopped! Or make red beans and rice.
