I confess to having eaten a zillion empanadas.

No, dear friends. That is surely an exageración . But it was a great amount. Leticia surpassed herself. She made seafood, meat and cheese fried empanadas. Normally, we would have had enough with a couple. They were not small, except for the cheese ones. But there were lots of it and they kept coming. And we kept eating. When lunch was over, I gave away the rest. Claudia took the meat ones for Vicente and Sofía. And I told Leticia to take the seafood ones to her home. I felt I did not want to see an empanada during a long time. Leticia makes the best empanadas that I have ever had. And, more than that, it was made with love. Of course, I thanked her and hugged her. And after a cup of lemon tea, I took the longest nap. Marta and Hector are not coming, so I can mylot a little now that I´m alive again after this feast. Leticia does not come tomorrow and I have an appointment with the dentist at noon. I got out to thaw a couple of chicken thighs to cook a light meal for me. Now, finally, I will read some of your posts and check on my notifications. See you around, dear friends.

I didn't know empanadas would have meat, seafood or cheese in them, I've only had the ones with pumpkin, guava or apple in them. The ones I've had were baked not fried and oh so good.

@rebelann Mexicans are less into empanadas and more into tortillas and tacos. Empanadas are made with wheat dough and Mexican food use corn more.

I love empanada, I always help myself to one when in the mall, I think it's one of those foods we our countries share from colonial mother Spain. Our version has no cheese, mostly ground pork or beef, carrots, potatoes and raisins. I think there is also a chicken version and some have hard boiled eggs inside.

@marguicha I agree, the Filipino version already has Asian influence specifically Chinese so at times the filling is cooked with a dash of soy sauce.
