Watermelon Jelly

I wanna give a huge thanks to our fellow myLotter, ms. @wolfgirl569 fer tellin' me 'bout such a tasty treat! The hubs'd bought a watermelon recently 'n though such 'twas red 'n juicy, it'd a most unappealin', mealy texture. He'd fergot the need to hunt fer a 'female' melon. I'd nary a clue's what to do with'n entire melon that 'twas provin' quite diff'cult to pretend 'twas edible. Made a watermelon/strawberry lemonade, heavy'n the latter 2 fer good measure. Tasted great, but still'd loads 'f watermelon left. Went'n search 'f a recipe that seemed fool-proof 'n set to task today. I confess that once this melon hit the blades 'f the blender, that sweet aroma filled the house with droolable bliss. Purty quick process 'n the hubs's now a new favorite jelly. Been doin' odd thingies this year, I reckon to make'p fer not havin' a bountiful garden (thanks, grasshoppers!). The past 3 days I've made/canned tomato salsa, small batch 'f spaghetti sauce (com'n maters, I know ya can do 't!), pickled some yellow summer squash, 1st time 'f makin' mango salsa 'n now I can add this watermelon jelly to my list 'f culinary delights. 've ya e'er eaten watermelon jelly? If'n not, ya might wanna give such a try.

You have been very busy. Watermelon is so sweet, is the jelly very sweet also? How do you tell the difference between a male and a female watermelon?

I saw Eva's (@wolfgirl569) post on this also and put it on my list of things to do next summer. I think this would be a great jelly. I know all the grandkids would LOVE it. I'm glad you gave it a try and confirmed that this is a winner.

I tried watermelon jelly and I like a lot. I even made a watermelon ice cream last year and it was very good, so refreshing. Good advice about the female watermelon, those are sweeter and with less seeds.

@Tampa_girl7 oh dear, i suppose not, ms. marie. i'm thinkin' 'f makin' some with apple juice's i dislike those artificial sweeteners. can ya eat watermelon? i'm uncertain to the glycemic 'ndex 'f such. lots 'f great juice/ice cream 'n sorbets can be made with 't. great fer natural electrolytes.
