Some who want to avoid carbs, may be surprised of the health benefits of potatoes.. I once had stomach problems and bought fermented potato juice and it was helpful.. Have you found that potatoes are good for you? My favorite potatoes are the almond shaped potatoes that grow here in North Sweden. What sort is your favorite?

I've read that there are about 6.000 different kinds of potatoes in the world. I love potatoes and wouldn't want to live in a country where potatoes aren't eaten at all or only rarely.

Sorry, only ~4.000 different kinds of potatoes! (Wikipedia "There are more than 4,000 varieties of native potatoes, mostly found in the Andes. They come in many sizes and shapes. There are also over 180 wild potato species. Though they are too bitter to eat, their important biodiversity includes natural resistances to pests, diseases, and climatic conditions."

We can eat potatoes in so many shapes - the taste is rather neutral, so they go with almost any food

I think it is not easy for me to avoid carbs. Basically I eat everything except for bitter food. Potato is one of my favorite food and I often use it to cook different dishes.

I had never had those almond shaped ones and I bet they are tasty from Sweden. I love spuds as we call them they were a staple in the country of my Mother, Ireland. Yes starch is bad they say, but I still eat them now and again. My Irish Granny used to drink the fermented potato as well along with carrots and onions and she lived til 99 yrs of age.

I like the baked potatoes at Wendy's. Baked is much better for you than french fries. Maybe adding butter or sour cream to a baked potato makes it less healthy, but I always do it.

The best thing I've learned about food, is that fat like butter is healthy - especially from grass fed cows - like organic..

we had the almond shaped potatoes in France, they are called "Amandine", good but not to make mashed or gnocchi. I do not have one favorite, it depends what I need to prepare.

@buenavida "The amandine" is the same potato no matter in which country. you can make mashed, but the result is surely not the best.
