What Did You Have for Dinner?

I put on a pot of red beans before I went outside to work in the yard this afternoon. It's one easy dish to fix and it needs to be slow cooked. I did not put them in the slow cooker as I didn't have that much time to wait for them to cook before dinner.
Red beans and rice with some sliced sausage tossed in is a dish my family has served since I was a little girl. My grandmother used to always have a pot of red beans on the stove and you could count on eating them along with pork chops, chicken, or some other dish whenever you went to visit.
I don't serve mine like the photo above (image from Pixabay), my beans are cooked in a creamy gray and served over rice. I like mine juicy and my hubby likes his thick with lots of rice. We grew up eating different versions of red beans and rice. I always add sausage or baked ham cubed and tossed in. It makes for a full meal that way.
What did you have for dinner tonight?

@kareng I love potatoes in all shapes and forms...as long as they don't have onions in them.

@kareng Idlis are steamed rice cakes. We make a batter of rice and some pulses in a ratio and leave it for 6-7 hours to ferment and then we steam it. Chappatis are Indian breads that we make from whole wheat flour. We prepare the dough and then roll it into round flat thin chapattis and cook it on a pan.

When my daughter visited us she left us an opened can of nacho sauce. I've been trying to use the stuff up so I put some in with egg noodles. I also stirred in some Greek yogurt to give the dish more nutrition. Cabbage on the side.
