What would you do with 20 pounds of potatoes?

Last week, Safeway had a digital coupon for russet potatoes that brought the price of a five-pound bag down to 25 cents. Crazy, right? I used our coupon to get the maximum two bags, and my neighbor who doesn't eat potatoes gifted me the two bags she bought. Now I have 20 pounds of potatoes and I've realized... we don't eat all that many potatoes. We're having baked potatoes with dinner tonight, and some will probably make their way into a beef stew later in the week along with some other veggies. My husband has a mean potato leek soup recipe that I'll talk him into making when that's gone, and I'm thinking of using some for homemade hash browns next weekend. But that still leaves a lot of potatoes to deal with. What would be your go-to meal ideas for a situation like this?

I love potatoes. And they donĀ“t have to be eaten all at once. Potato salad, potato soup, shepherds pie, French fries. You name it.

Ooh, I can't believe I forgot about shepherd's pie. We all love it. That's definitely going to go on my list of things to make with these potatoes. Thanks for the ideas!

@lynnwrites And then mashed potatoes as a side dish of any stew. Now that you are starting cold weather, it is wonderful.

I don't think I would have been able to pass up a deal like that either. Man, baked potatoes and that potato leek soup sound delicious. But I would also consider doing some potato salad, make a stew and put some potatoes in that. One thing we like to do to change things up a bit is make a baked potato and top it with hamburger cooked in Manwich, and then layer on some shredded cheese, green onions, sour cream, bacon bits...yummy. There are a million and one things you can make with those potatoes.

Today is one of those cloudy, vaguely icky days that's perfect for stew. I'll probably put a bunch of those in there, and I'm microwaving one for breakfast today. At least they're a very versatile vegetable!

If you have a freezer (and space in it, of course), it's easy. You cook and process the spuds in whatever way you prefer. I would parboil some, ready for roasting; bake the larger ones, ready to be filled with a topping of your choice and boil and mash some to be brought out and reheated as needed. All of those freeze well and can be brought out and either unfrozen and used or put straight in the oven frozen and reheated.

@lynnwrites I know the feeling! I can only suggest potato chips/crisps (or drying the potato mash) as a way of preserving such a large quantity of potato!

I love potatoes, but can't eat them much because I'm a diabetic. Maybe you can make some Sheppard's Pie or some potato pancakes.

I've never made potato pancakes but that does sound like a great use for them. I'll have to find a good recipe for them online and give it a shot.

Potato salad. I love potato salad. I make a huge pot of it then freeze it in freezer bags for future meals. Also, shepherd's pie. I love potatoes any way you cook 'em.

A microwaved baked potato is my go to fast food, rather than a sandwich. We top our taters with chili, or any thick soup or with cheese and sour cream. I think a soup would be great as well.

That's what we did tonight. I baked the potatoes in the oven and we ended up serving them with a bit of butter, sour cream, and melted cheddar on top. Microwaving them is a lot faster. I'll probably cook a few of them that way on Monday and pack them up for the kids' lunches. They stay nice and warm in the little thermoses I have for them.

That is a lot of potatoes! You could make a potato soup (you would need other ingredients as well, like probably your leek soup), also you could make home-made mashed potatoes, roast some potatoes (I like roasting them with dill and olive oil - nom), fried breakfast potatoes, or even try to make some home made au gratin potatoes (I have never tried this) OR home made French fries!

It is! I have a recipe for a potato and ham soup that I haven't made in a while. Maybe it's time to dig that one out again. Roasted potatoes are so simple and good. I have dill in my spice cupboard and rarely use it. Maybe it's time to change that. My husband keeps trying to talk me into getting an air fryer. That would probably be perfect for making homemade French fries. I've never tried making au gratin potatoes. That might be something to find a recipe for and give a shot as a side dish.

That is a super deal, but yah, that's a lot of potatoes too! That would be a good stash to have in the pantry at this time though. We bought a lot of potatoes (though not 20#s) . . . I ended up giving some of it to my parents as I have to think of their supplies as well. I guess they are good meal stretchers. We have done the same as you - baked whole, stew, soups . . . also baked fries, mashed, potato salad, mostly side dish stuff. But with a stash, I try to keep them in the dark and away from onions so I could use them at a later date.

If you have a dry and cool basement, put them there. They will last for a long time. You can also pack some pounds nicely and give them away as Christmas gifts to people who understand jokes.

Houses where I live don't have basements. I'm storing them in the garage for now, since it's cooler than the house. Things are a bit tight for us right now so I probably won't gift any of them... although now I'm wondering if I should box a few of them and wrap them for the kids to open at Christmas. They'd definitely get the joke.

@lynnwrites They can be used in potato salad. I put them in the chicken when I make it in the crock pot. I also put them in ghoulash when I make them.
