Turkey Sandwich for Dinner

Still have leftovers in the refrigerator from Thanksgiving. Just had a turkey sandwich with a small amount of sweet potato casserole. It was really good.
The sunshine is gone. Has been overcast all afternoon. Rain coming later perhaps. Still very windy.
Talked to my uncle for a minute. He sounded good. Was looking forward to his nurse coming back tomorrow. She is off on weekends. He laughed a little, and told me he loved me. Enough for now.
Funny, a friend and I were talking and she kids me about eating so many waffles. I told her I was fixing a turkey sandwich for dinner. She sent me the photo above! That gives me another idea for my waffles.

Same here, we try to be creative with the leftovers from the holiday feast. No matter how little I cook for the holidays, there's always the leftover.

@CarolDM we also that when the leftover is meat or saucy dish that is good to eat with bread. But most native soup dishes here are only good for rice.

so glad he's her return to keep him goin' 'fter a long weekend, hon. we'd sunshine, the winds calmed, but 'twas still most chilly.
i'm guessin' 'twas a turkey sandwich with 2 waffles fer the bread? sounds like a good plan to me anyhow, lol.

That's good that your uncle sounded a little better. My favorite leftover is a turkey sandwich and watergate salad. Unfortunately, we had ham, but no turkey.
