February Recipe Report Card

Mylotter friends, it's time for the February recipe report card since February ended last weekend and we're in March now. Better late than never. Overall, it was pretty good with a lot of hits and one near-miss to round off this month. So here we go with my graded recipes for last month: 1. Hearty Italian White Bean Soup-A+. This was an absolute and fantastic easy soup to make and delicious too. I loved the mixed array of veggies with the white beans in this soup. And leftovers was a bonus, when I had them last weekend to end the month. 2. Pasta Amatricana--A+. Pasta dishes are always a big hit for me to keep me full. This was so easy to make and whip together in less than a half-hour. No leftovers due to running out of pasta for a second batch. 3. Mini Cheesecakes-C. This was the only near-miss recipe. I was so disappointed. I brought the wrong vanilla wafers (not the mini ones), and my cheesecakes didn't turn out so well when I baked them. Though it was edible with the various toppings, it did taste good. Some leftovers were okay and the others tossed out. This deserves a do-over for redemption this summer. 4. Thai Style Turkey Burgers-A-. This was a treat to make with an exotic taste. With toasted buns, it was sweet and tangy. I've made two and had one as a leftover to have last week. 5. Easy Spinach Riccota Pasta-A+--This was the first dish I've made last month. It turned out so good too. Hearty and filling and scrumptious in every bite, I've made enough to have leftovers for another night. 6. Oreo Dessert Cake-A-. The last time I've made an Oreo dessert, the crust didn't come together to hold it together. This time, I've added enough melted butter for the crust. And it worked out wonderfully! I've had two rounds of leftovers to keep me satiated last month. 7. Crockpot Italian Meatball Soup--A- This was another delicious soup to have on a winter night. And the meatballs were a bonus treat. So flavorful, though I didn't have any tomato sauce on hand, I've used ketchup + water. And my leftover tasted even better. 8. Crockpot Chicken Tostada Pie--A. Though I've goofed with sizing the aluminum foil strips in the crockpot, it did come out so good with a hint of heat. I've added a scoop of sour cream to help me out with the spices. And leftovers didn't come out too bad either. 9. Easy Cannoli Cake (Pinterest)--A+. Although it didn't look like it in the picture, it came out so good anyway. I've made my own heavy cream since I've ran out of it. And I've had two rounds of leftovers, in which I've finished the last round on Monday night. 10. Crockpot Pepper Jack Chicken-A-. Although a tiny bit spicy, it did some out so good by cooking the chicken to shred and adding the cheese in the end. I did have leftovers to have this week, but it won't count for last month. 11. Crockpot Ravioli Meatball Casserole-A+. Another hit and so easy to make in little time to throw in the slow cooker for a few hours. It's to die for... literally. And yes, I had leftovers this week, which also won't count for last month. 12. Jennie's Heavenly Slow Cooker Chicken--A-. Another winning chicken dish to close out this month. Absolute perfection and scored across the board for easiness and needing a few ingredients. Leftovers was also a hit last month as well. That's about it to report!
