Haystacks for dinner

We have a lot of leftover turkey after yesterday... lots of leftovers in general, actually. I'm feeling kind of tired today and didn't feel very inspired when it came to tonight's dinner, but April reminded me about my old standby -- haystacks. I've posted about them before, but it's been a while... they're a build-your-own type of dish, usually with something like rice or tortilla chips or potatoes at the base, then layered with some protein, vegetables, and other toppings. It's a good way to use up odd bits of leftovers in your fridge too. We had turkey meat, lettuce, rice, tortilla chips, corn, tomatoes, bell peppers, sliced cucumber, diced avocado, carrots, shredded red cabbage, baby spinach, pineapple, refried beans, shredded cheddar, ranch dressing, and sour cream. Each person chose what to put on their plate and designed their own stacks. Not everyone used the same combination of items, but they had to at least choose some protein and a variety of vegetables. We had a dish called " Menudo" ground beef sauted in onions and garlic, tomato sauce, diced carrots, green peas and potatoes added. Haystacking is a cool idea.

@JhovanPH menudo is common " carinderia" ( street eatery) type food that I like but like more when it's prepared in the house.

I've mostly just known menudo as a soup... is it different in the Philippines than it is in Mexico and the US?

Tonight was black eyed peas with zucchini and onion, brown rice, an egg roll. Then a chunk of hubby's shortbread and a couple of little chocolate Easter eggs.

@spiderdust I never cook pork because my husband does not eat pork, I also like the veal schnitzel, but it's expensive.

@rakski My coworker makes adobo for our hot bar at work sometimes. She was born in the Philippines too. Sometimes she has sent it home with me.

I need to make them this weekend. Probably with stew meat or ground beef though, unless I get motivated to go to the grocery store for a meat stock up trip.

I've made them many times with ground beef. That's the beauty of haystacks, you can pretty much make them with anything you have on hand. This link can give you some ideas:

@spiderdust I think it's a recipe the kids will like. You know if they ever get to actually come home. Stupid coronavirus. I miss mah babies. Who would kill me if they knew I was calling them babies.

That's great to hear. Amm about our dinner, we only have some grilled meat and some soup we called it "sinigang" (it is some kind of Filipino soup with the taste of sourness, it contains vegetables dominantly are leafy veggies and it has a corn with some sort of fish)
