Saturday Night's Dinner Creation

I worked out in the yard and the garden this afternoon for several hours. I didn't give much thought to dinner and did not take anything out of the freezer to cook. I came inside at 4:30 to put dinner on but didn't know what I would be fixing.
I pulled out the rest of the baked chicken we had for dinner the night before and decided to turn it into a casserole. I added a can of cream of mushroom soup, a can of water, a small can of mushrooms, and a drained can of green peas. I seasoned it all with the low sodium mixed spices from Dollar Tree and topped it all off with Parmesan Cheese. I baked it for 30 minutes and took it out to taste it. Yum!
I also put on some brussels sprouts to add another vegetable and that was dinner. Everyone enjoyed it. This will be one of my chicken leftover meals to add to the rotation.

My girlfriend and I baked a delicious lasagna for dinner tonight. Well, she baked it and I just watched. haha
