Leftovers make sometimes the best lunch. I had a bit of leftover ground meat (with all the trimmings for a hamburger). I also had some leftover chard with cream (a favorite). I heated both and here I am, very happy mylotting. I could have cut up a cooked potato I have and fry it with some parsley. But I am not that hungry. What did you have for lunch?

@JudyEv When I was a child, lambs were nor expensive here. So my mother often bought a leg of lamb to roast it for a Sunday meal.

@marguicha We rarely buy it but legs of lamb were on special so we snapped up the biggest and cut it in half. The cost per serve will be quite reasonable.

@m_audrey6788 I roast eggplants, onions and sweet peppers with plenty of olive oil and then the olive oil is used instead of butter and the roasted veggies are delicious.

I made pasta with a "Puttanesca sauce" (it is a spicy tomato sauce with capers and black olives) for lunch, we had apricots after the pasta.
