What piece of equipment does every kitchen need ?

A serious question … as I am moving into a new house soon .
I am, at the moment, buying items ...mainly for the kitchen .
I made a list and am working my way through it ...but ...you know how it is ...I am bound to have forgotten something !
So, I would like to know ...what is the piece of kitchen equipment that you would not be without ?

I should imagine you've thought of the big, obvious things like a cooker, fridge/freezer, washing machine. I couldn't be without my microwave, and I've found that a slow cooker is also quite handy.
It is likely to be the little things that you forget - like a tin opener (that's the one I'd always forget). Other things might be a good set of knives (especially a good vegetable knife), pans and oven dishes (including microwave-safe ones, if you'll be using a microwave). Depending what and how you plan to cook, you might want: spatulas, potato masher, pizza cutter, weighing scales, measuring cups/jugs, tongs, basting brush, mandoline/slicer, cheese grater, wooden spoons, whisks, blender.
Can't think of much else. To be quite honest, the only things I wouldn't be without are my microwave and tin opener!
