You Won’t Believe This!

Last week I wrote about one cauliflower plant I ordered when we returned from Florida in May.
Along with my order, I ordered a few other vegetables to grow on my deck.
There was something I did not recognize and thinking it was a weed, I tossed it into the woods. We usually toss brush, branches, etc. into the woods.
Well, hubby and I were outside tidying up the yard, and hubs made a discovery. A beautiful, healthy beet plant was growing in the woods!
Guess what I’m serving with dinner? Hubs doesn’t like beets, but I sure do!

@thelme55 Thanks so much! I have the ingredients to make the Marinated Beets with Pistachios and Tarragon. Unfortunately, I don't have the time to marinate them, but can begin later and finish in the morning. Then they will be ready for tomorrow's dinner.

Oh that is great! Beetroot could be a bit hard to eat at times, but verg good health wise- especially with regards to its Iron content.
And one can make some sweet things with it too.

We prepare a soup of Carrots and Betroots in winters and enjoy with different kinds of Indian breads- Chapatis etc.

You remind me that I haven't eaten beetroot for a long time. My mother used to either make them as warm vegetable together with potatoes and meat or boiled, peeled, cut into pieces, and with some cubes of onion, salt, oil and vinegar as a salad. Very tasty!

@DianneN I know borsht. I had it in Uzbekistan when I travelled there two years ago. It is a remnant from the time when Uzbekistan was part of the Soviet Union.
I also ate it in Russia many moons ago.
It even made its way to the GDR, the former German Democratic Republic. My relatives who live there still eat it occasionally and one can get it in restaurants.

Those sound delicious ways to prepare them, too. My grandmother made borsht (a Russian beet soup) and severed it with cut up boiled potatoes, sour cream and sometimes diced cucumbers right in the soup. Since hubs doesn't care for them, I would order them if I saw them on a menu in restaurants. They are delicious and healthy, too!

@LindaOHio Love them, although hubs prefers them cooked. You and he have similar dislikes. My problem is that I love everything and put on 4 pounds.

@Spontaneo Yes, only because that's how my mother served them. She didn't know better and wasn't much of a cook. I assume you do?
