As fit as a Mallee bull

I told her she would be as fit as a Mallee bull. This is a very Australian idiom phrase. It means to be in good physical shape. ‘Mallee’ is an aboriginal name for a particular eucalypt that grows from 2 to 9 metres in height. Many stems grow from a swollen woody base and the leaf canopy forms an umbrella shape. There are several mallee regions in Australia. If cattle escape into these regions, there is little in the way of grazing or water so they need to be tough to survive.

It is funny to learn these local phrases we say fit as a fiddle but I am not sure why lol

I saw Isabelle's response below mentioning fit as a fiddle, which is a common phrase here, but there are also others, including healthy as a horse and strong as an ox. Obviously, those last two don't need much explanation. I always find it interesting to learn about idioms.
