Keto Pumpkin Bars

United States
December 24, 2020 7:08pm CST
I made keto pumpkin bars just a bit ago. I've told several people here before that I am not much of a baker, so I was a little concerned but I followed the instructions and everything turned out great. I think I should have made a little bit more cream cheese icing than I did, but it does mostly cover the bars. I took the beater test (licked the beaters and scraped the bowl) and they taste exactly like the ones I bought earlier this month with a friend. Here's the recipe I used :
This easy pumpkin bars recipe with canned pumpkin & cream cheese frosting is gluten-free & low carb, with healthy, natural ingredients. Just 10 min prep!

@kaylachan I love cream cheese icing too, especially on carrot cake. I need to find a keto version of that, actually...

They sound delicous, and I am always interested in low card recipes. We didn't bake anything this year, but we might do it when we get back from our vacation.

@LadyDuck It has been a staple in our family for years. We had pumpkin pie even when we didn't have pecan pie.

I wish you could find it somewhere. You might be able to use a sweet potato instead to be honest. It would taste a little different but still be good. Does Germany have canned yams?

@thelme55 I hope you can find a suitable alternative. If you have canned yams then that might be the easiest option.

@ScribbledAdNauseum I wish I could. A sweet potato is a good option. I have no idea if we have canned yam here in our supermarkets.

I love pumpkin, but never tried making something out of it except 'kolak'. And I am not a good Baker or chef. Maybe I'll ask my sister to make it. Thank you for the recipe.

They look good. I made Keto Peanut Butter Fudge, which was pretty good, but I liked the real thing I made last year better.

Did you use PB or Almond butter? I made fudge with almond butter and lilly's chocolate chips. Also, I would recommend putting a bit of sea salt on top of them. I think it really helped the flavor.

@oahuwriter We all deserve at least once per year where we let go and eat what we want. I'm on the ketogenic diet now, but I've had several days where I've consumed higher carb foods this month.
