Low calorie vegetarian chili

I haven’t ever made vegetarian chili with counting calories in mind, normally I load it up with beans and all kinds of veggies and then of course topped with cheese, sour cream, corn bread or some kind of “dipping bread”. But I’m trying! So without all the add ons, I made the lowest calorie vegetarian chili I could come up with. What you get is 90 calories per Cup, and this recipe makes 16 cups. 2 onions 2 red peppers 4 zucchini Minced garlic 1 15oz of diced tomatoes 2 15oz black beans 1 can corn Cayenne pepper, cumin, chilli powder to taste 1/2 large bottle of spicy tomato juice 1 32oz vegetable broth I used 2 tbs of low fat sour cream to top with to add some creaminess. I was happy to eat about 3 cups with sour cream and not have to feel guilty about it. Awesome! Anyone else try any healthy or low cal recipes that worked lately?

That sounds very delicious. I just have to say we cannot post recipes here but you can rewrite and just tell about what you include in the chilli I am making a flounder fish fillet tomorrow with some rice, ,

Sure we can. This is my recipe, I am posting it as part of a discussion. I am not breaking any rules, and since I created it, there is no one to give credit to, but myself. I enjoy chili, although mine is more soupy than anything. Enjoy your flounder fish! I can't say that I have ever had that.

@RasmaSandra I post these frequently, lol, but maybe they just haven't busted me yet. You read post after post about dinner plans and food, I can't see why this would be any different. So, I wouldn't worry about it as long as you're not plagarizing / stealing someone else's work.

In the photo it looks more like a soup! Was it nice? For dinner yesterday I made tamarind chickpeas. Main ingredients were one onion, a can of chickpeas and a can of tomatoes, plus spices and a few spinach leaves. The recipe said it serves two and contained 334 kcal per portion, but in fact we only ate half of it between two of us (so that would be 167 kcal each), with some cous cous (don't know how many calories in that). So that was a pretty low-calorie meal. It was tasty too, and cheap!

Wow, that sounds awesome! I am going to look this up. Low calorie and vegetarian! I definitely need something that is filling and I bet the chickpeas in your recipe would do it. My chili is always kind of soupy, not thick, especially this low calorie version. But, still pretty good.

@maezee I ate some of the rest of it for lunch today, on toast with a poached egg on top. That was a really tasty combo. I will definitely make it again. If you want I can put the recipe on here - remind me tomorrow!

I sometimes chop cooked sweet potato or yam into my vegetarian chili.
