I got three jars of kimchi

Kimchi is done! It took me more than three hours The process of making it is long as I need to turn the cabbage every half an hour. Then I I would wash them after two hours. I have to drain them well before rubbing the paste. Since they're done, I'll let them ferment for around two days before putting the jars in the fridge. I decided on small jars instead of huge plastic container. Somehow the fridge is full of something again so the huge plastic container is not ideal. Now onwards to my next task!
Do you guys eat kimchi? Some might, some might not. Some might probably never heard of it. Kimchi is a Korean side dish made from fermented cabbage (mostly)....

Yes..since the day I started watching Korean dramas and Korean mukbangs, I heard about kimchi a lot. But I still haven't tried or made it yet. I think it is similar to aachar in India, only aachar is a little to spicy and oily.

No oil use to make kimchi, that's for sure. It's pretty similar as this is also fermented.

I hope so too. It's more satisfying than store bought as the cost is not even close for 1 jar of store bought kimchi.

Depend. I would eat it with warm rice or noodles. Or I would make jjigae with it. It's like stew or soup. I would also make pancake.

It is a lot of work to prepare Kimchi, I never tried, the only fermented cabbage I ate is sauerkraut.

@prinzcy I buy it ready made, it is a slow process to make at home, you need to finely shred the cabbage and let it ferment

More like take a lot of time. I turned the cabbages, do something else, then turned the cabbages again, then do something else again. Repetitive process for two hours. The easiest way is to soak it overnight but I'm not doing that. Plus I am making cut kimchi instead of whole kimchi.

Good for health these kim chee, and I got one on sale. But, only me eating it so it takes a while to finish. Enjoy your kim chee in you worked hard for it!

It wouldn't be if I do the overnight soaking process. But I don't like the whole kimchi. I prefer to precut my kimchi so it's easier for me to eat it. I don't know whether leaving it overnight will make it more saltier.
