Got up early

Well hubby was up around 7 this morning. He ate breakfast, etc. then went back to bed by 9 a.m. I think he is feeling unwell. or maybe slept poorly wondering about the power outage that did not happen. At any rate, I have lunch cooking now. When my daughter and family were here I made a pork roast. We did not even come close to eating it all so I froze it. I have been improvising meals for hubby and I. Today I have shredded some and put it in a small crockpot with barbecue sauce. We will have baked beans and red cabbage with it. That is something different for us. I have one more serving that we will enjoy. I will make a gravy to go with that. Do you like to use up leftovers?

I think we are still having a bit of a let down as the daughter and grands left and then our trip for this weekend got cancelled.

I hope your hubby is ok! We definitely try to make use of leftovers. When we have leftover frozen pork, I will make a Japanese noodle soup out of a portion of it - makes a quick lunch/dinner.

I wish hubby liked noodles. I will likely serve some with potatoes. I could also think about a stir fry perhaps with rice.

@GardenGerty I thought everyone liked noodles . Potatoes goes with a lot of things - we are having some tonight too. Oh - a stir fry with rice would work too .

My hubby and I are good about not making any. So there's usually not a whole lot to use. When we do we use it it pretty quickly.

I love using the leftovers. Throwing them out just like that is certainly a waste. That's my hard earned money too.

Leftovers are grand- sometimes in next day's breakfast, sometimes next day's supper. It's nice to not have to do so much cooking each and every day.
